It depends. I know that's not the best answer but I used to work for a juice company and there are a different options.
1st off within a day or 3 depending on the store and item, the product its almost always taken off the shelf.
Then, again depending on the store selling it and the company where the food came from, it'll either just be destroyed (thrown in the garbage) or they may need to hold on to it to show it to the food manufacturer as proof it didn't sell. I personally had an issue where an order got screwed up in shipping and was delivered like 3 days before it expired. I had to go out to the stores warehouse, count the unsold and expired items and give the store a refund. The unsold and expired items were then thrown out.

Based on the SOP (System Operation Procedure), those expired product should be DISPOSED away. This involved HACCP (Hazard Analysis Critical Control Point) principles. HACCP is used in the food industry and retail establishments to identify potential food safety hazards. Most of the Supermarket has this systematic preventative implemented.

If it's refrigerated food (cheese, meat, yogurt, etc.), they usually reduce the price before it goes out of date--hoping to get people to at least pay something for it. In some smaller towns, the stores donate it to food banks, etc. for people who are hungry immediately.
If it's non-perishable food (cans, boxes), you usually see them in a shopping cart or shelves that say, "Clearance." These are sometimes also donated to food banks in some places.

Tehy reduce prices on the last day of the date of the food. If not sold then they throw out unfortunately.

Depending on what kind of food it is they mark down the price and sell it anyway. if its not sold after a week then they throw it away.. unless its meast or other parishable items.. then they try to sell them the next day and trash whats left.

Before it's out of date, they move it to the front rows. (When you buy milk check the dates in th back galons and compare it with the ones in the front). after they expire they, eather, return it to the manufacturer or throw it away.

Some is given to soup kitchens & charities...
