If you are going for optimum health the first place to begin with vegetables is to get all organic ones. Carrots for the beta-carotene, greens-broccoli, green beans, Brussels sprouts, spinach-all so good for you-and if you can eat them raw even better!!

In my opinion the sweet potato has got to be the best. It has more fibre than bran flakes, it has potassium, calcium and a host of other nutrients, and it is low in calories. It is a perfect carbohydrate and is very low on the glycemic index.
