Gray hair is caused by the absence of pigment within the hair folicules. There are so many reasons why the pigment can 'die'. Such as stress, depression, drug abuse or it can just be genetic and natural, etc.

ive got white hair, i think its because of stress - i realised that when i started getting the white hair, i was so very stressed. i think its maybe stress, i did do some research into melanin and phjeomelanin as another answer said.
Im not saying that there is a lack of melanin etc but i think through stress you perhaps lose them chemials that keep your hair coloured?

Hair color is the result of pigmentation due to the presence of the chemicals of melanin and phaeomelanin.

Considerable differences in hair color and texture exist between individuals of similar ethnicity, and immigration and global travel have greatly increased the diversity of hair characteristics in many countries. People also dye their hair to colors that do not occur naturally.
