Try the following stir fry recipes which are really, really nice

Stir-fried Chicken with Lime and Coconut
2 Traditional Free Range boneless, skinless chicken breasts
grated zest and juice 1 large lime
5 fl oz (150 ml) tinned coconut milk
1 dessertspoon olive oil
1 green chilli, deseeded and finely chopped
1 dessertspoon Thai fish sauce
4 heaped tablespoons fresh coriander leaves
4 spring onions, cut into 1 inch (2.5 cm) shreds, including the green parts

First of all chop the chicken into bite-sized pieces and place them in a bowl with the lime juice and zest. Stir well and leave them to marinate for an hour.

When you're ready to cook the chicken, heat the oil in the pan or wok over a high heat, add the chicken pieces and stir-fry for 3-4 minutes, until they're golden. Then add the chilli, stir-fry for 1 more minute, and add the coconut milk, fish sauce and half the coriander and spring onions. Cook for another 1-2 minutes, then serve with Thai fragrant rice and the remaining coriander and spring onions sprinkled over.

Sweet chilli pork stir fry with steamed rice
250ml/10fl oz vegetable oil, for deep frying
1 tsp sesame oil
25g/1oz cornflour
1 free-range egg white, lightly whisked
125g/4½oz pork tenderloin, cut into bite-sized slices
1 tbsp olive oil
½ red pepper, sliced
2 spring onions, sliced
½ tsp dried chilli flakes
1 tbsp soy sauce
1 tbsp honey
55g/2oz basmati rice, cooked according to packet instructions
fresh dill, chopped to garnish

Method
1. Heat the vegetable oil in a deep, heavy bottomed saucepan, until very hot or until a breadcrumb sizzles in it (CAUTION: Hot oil is very dangerous. Do not leave unattended).
2. Make a batter by whisking the sesame oil, cornflour and egg white together. Dip the pork in the batter to coat, then place into the hot oil to deep fry for three minutes or until crisp and cooked through. Remove and drain on kitchen towels.
3. Meanwhile, heat the olive oil in a wok. Add the pepper, onions and chilli flakes and stir-fry for three minutes. Then add the soy sauce, honey and pork, and cook for one minute to warm through.
4. Serve with the cooked rice and garnish with dill.

OR Italian stir fry
1 tbsp olive oil
½ onion, finely chopped
½ red chilli, finely chopped
1 garlic clove, finely chopped
1 beefsteak tomato, roughly chopped
2 tiger prawns, cleaned, shell removed and chopped
125g/4oz rice noodles, cooked according to packet instructions
1 tsp chopped fresh parsley
1 tsp chopped fresh chives
salt and freshly ground black pepper

Method
1. Heat the oil in a wok or heavy-bottomed pan. Add the onion, chilli and garlic and fry until soft.
2. Add the tomato and prawns and stir-fry until the prawns are completely cooked through.
3. Add the noodles and parsley to the pan and mix thoroughly together. Season, to taste, with salt and freshly ground black pepper.
4. To serve, place noodles on a warmed plate and garnish with the chives.

Or Grilled teriyaki chicken with leek and pepper stir fry
For the chicken
1 tbsp sesame oil
1 tbsp honey
1 tbsp soy sauce
100g/3½oz chicken thigh meat, scored with a sharp knife
For the stir fry
1 tbsp olive oil
1 garlic clove, finely sliced
¼ leek, finely sliced
¼ red pepper sliced
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. To make the chicken, in a large bowl mix together the sesame oil, honey and soy sauce.
3. Cover the chicken in the marinade and leave for five minutes.
4. Heat a griddle pan until smoking.
5. Char-grill the chicken for two to three minutes on each side.
6. Place in the oven and roast for five minutes.
7. To make the stir fry, heat the oil in a small frying pan. Add the garlic, leeks and pepper and cook until soft.
8. Pour in the marinade mixture and bring to a simmer. Reduce until thick.
9. To serve, spoon the stir fry into the centre of a warm plate and place the chicken on top

Sweet and sour chicken stir fry

2 tbsp oil
½ chicken breast, skin on and diced
sprinkle of cornflour
4 tsp sesame seed oil
½ broccoli head, cut into florets
½ onion, peeled and sliced
3 tbsp soy sauce
pinch of ground ginger
drizzle of honey

Method
1. Heat the oil in a non-stick frying pan. Coat the chicken pieces in cornflour, then pan-fry in the hot oil for 5-6 minutes, turning over half way, or until the chicken is browned and cooked through.
2. In a separate pan or wok, heat the sesame oil and add the broccoli with the onion. Stir-fry for a few minutes, to soften. Stir in the soy sauce, ginger and honey and stir-fry for 4-5 minutes. Add the chicken pieces to the pan and heat through, adding more soy sauce if necessary.
3. Serve

Here is a recipe for Chicken with Walnuts
It makes 2-3 servings

2 Chicken Breast halves
1 1/2 Tsp Soy sauce
1 Tsp Cornstartch
1 Tblspn Dry Sherry
1/2 Tsp Grated Gingerroot Peeled
1/2 Tsp Sugar
1/4 Tsp Salt
1/4 Tsp Crushed Pepper Flakes
1 Tblspn Cooking Oil
3/4 Cup Diced Green Bell Pepper
3/4 Cup Onions cut 1inch on the bias
1/2 Cup Walnut pieces

Hot Cooked Rice 1-1 1/2 Cups


Skin and dice the chicken into 1 inch pieces.Placein a bowl and refrigerate.

In a bowl,stir cornstartch into soy sauce;add the next five ingredients.

Preheat panover high heat.Add oil.Stir-fry peppers,and onions for 2 minuets or until crispand tender.Remove from pan and set aside.Add nuts to the pan and stir-fry 1-2 minuets or until golden.Remove from pan and reserve. Add more oil to the pan if necessary and place half of the chicken in hot oil.Stir-fry 1minuet.Repeat with the rest of chicken.
Add cooked chicken to pan.Stir soy mixture.Stir it into the chicken.Cook and stir until slightly thickenedand bubbly.Stir in Vegetables and nuts;Cover and cook 1 minuet more.

Serve over the hot cooked rice

I buy think chicken strips and marinate them in a bit of soya sauce and a bit of olive oil.

I then add (chop as much or as little as you want to cook):

mushrooms, green peppers, baby corn, celery, onions, carrots, broccoli, and bean sprouts.

You can add chinese greens or any other veggies you prefer.

Add a bit more soya sauce, and a dash of water and cover. (and I buy and add the powder pouches of chinese seasonings...one for veggies...and the other for rice....if you can't find these, other powdered seasonings will do.)

Boil rice, which ever you prefer, I just make instant. I make it ahead and let it cool then I stir fry the rice in another pan with some olive oil, the seasoning mix, and I crack an egg in the rice too and stir it all up and add the seasoning...(I mix the seasoning in a bit of water first then add it so it's well mixed). Just fry it up for a few minutes and stir constantly.

At the end I add a few dashes of sesame seed oil to the rice (or noodles if I make noodles in place of rice).

Once the veggies have simmered for a few minutes I uncover, stir it all up, let it cook a few minutes more depending (you still want it crunchy but soft too) and then I just pour the veggies over the rice. I let everyone serve themselves but best served right away while hot.

Stir-Fry Pork with Ginger

INGREDIENTS
2 tablespoons vegetable oil
1/2 inch piece fresh ginger root, thinly sliced
1/4 pound thinly sliced lean pork
1 teaspoon soy sauce
1/2 teaspoon dark soy sauce
1/2 teaspoon salt
1/3 teaspoon sugar
1 teaspoon sesame oil
1 green onion, chopped
1 tablespoon Chinese rice wine

DIRECTIONS
Heat oil in a large skillet or wok over medium-high heat. Fry ginger in hot oil until fragrant, then add pork, soy sauce, dark soy sauce, salt, and sugar. Cook, stirring occasionally, for 10 minutes.
Stir in the sesame oil, green onion, and rice wine. Simmer until the pork is tender.

Just made stir fry last night... took a pound of sirloin strips and browned them, then removed from skillet and set aside. Put in 2 cups of brocolli pieces (stems cut off), about a cup of mushroom slices, and a can of baby corn, cut into bite-size pieces. Cooked the veggies until the broc was tender, then re-added the beef and added about a cup of stir-fry sauce (kikoman makes it). Served over rice with egg rolls.

Yum!

In the superstore, fruits are usually selected much too soon. Some are rocks, many are bad. Some of the fresh vegetables are typical right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.

Beef or chicken
Julienne your veggies
Use soy sauce, ginger, and garlic.

Also, if you have any around you can just use the seasoning packets from the ramen noodles.
