I live in Buffalo, NY. It was invented here.

It started as Buffalo Chicken Wings. They come in varying degrees of spiciness-- mild, meduim, hot, and suicide. Nowadays some places will even do BBQ and other types too.

Basically, you take a chicken wing, toss it around in a bowl or canister with some hot sauce, and then fry it.

For people who don't like the bones in chicken wings, there's also "Buffalo chicken strips". These are made the same way, but instead of bon-y chicken wings, they put buffalo sauce on a chicken tender / strip of boneless chicken.

Hope this helps... enjoy 'em. :-)

Buffalo chicken wings are the single greatest invention in the history of the United States. The recipe was invented in Buffalo, NY, and is simply fried chicken wings which are tossed in a mixture of hot sauce and butter as soon as they come out of the fryer. The hot sauce that is used is a vinegar / cayenne based sauce. The wings can be made spicier or milder by adjusting the hot sauce / butter ratio. They are usually served with bleu cheese dressing and celery.

Good Buffalo chicken is really excellent, especially with beer. But beware, there is a lot of bad buffalo out there. Some people will just pour a little hot sauce and bleu cheese (or ranch dressing) on any food and call it buffalo.

From Wikipedia, a history of the Buffalo Chicken Wing:

Buffalo wings were first prepared at the Anchor Bar on Main Street, near the corner of North Street, Buffalo, on October 3, 1964. Teressa Bellissimo, co-owner of the Anchor Bar with her husband Frank, had the idea of deep frying chicken wings and tossing them in Frank's Red Hot sauce[1] for her son Dominic and his friends. One evening, on a spur of the moment, Teressa presented her son with a deep-fried and sauced creation, and they were an instant hit. At the time the recipe was created, chicken wings were typically thrown away or reserved for making stock.

In Buffalo, the best-known places for authentic wings are the Anchor Bar and at Duff's, outside the city limit on Sheridan Drive in Amherst. Wings can also be found in most pizza restaurants and corner taverns throughout the region and in neighboring Southern Ontario. The Anchor Bar serves more than 36,000 pounds of wings per month. Locals do not call them Buffalo wings and consider such usage to be uninformed. Instead, Buffalonians call them "chicken wings" or just plain "wings."

First, it has nothing to do with buffalo, but I think it was originally invented in Buffalo, NY. Yes, it is American. It's simply chicken cooked in a hot sauce, like Tabasco or some other type of Louisiana hot pepper sauce. It can be very spicy but it depends on who's making it and what type of sauce they use. Usually it's served as chicken wings with blue cheese sauce for dipping, and celery sticks and bread to help absorb and cool the heat. I always like a tall glass of milk too.

Willow had it right (from Wikipedia). I'm from Upstate New York originally, and the wings there are the BEST! Buffalo sauce can range in flavor from mild to volcanic. Usually served with Ranch dressing or creamy bleu cheese for dipping.

A word to the wise - breaded ANYTHING "Buffalo" isn't authentic. Buffalo wings, or chicken, aren't supposed to be breaded. Even though it may be doused in "Buffalo" sauce doesn't mean it's right. LOL

Doesn't mean it isn't good, but it's just not right ;)

I'm guessing it is American I know Buffalo wings are named after the city of Buffalo, New York where they originated, and the appellation "buffalo" is now commonly applied to foodstuffs other than wings that are seasoned with the sauce or close variations on it.

Usually buffalo chicken is just some type of chicken with a buffalo sauce on it. Buffalo sauce is a hot sauce like on buffalo wings.

This article is about the food Buffalo wings.

Buffalo wings, wings, or chicken wings are chicken wing sections (called flats and drums), deep fried, and coated in sauce. Although many variations on this sauce exist, the original "Buffalo" sauce is composed of only five ingredients: cayenne pepper sauce, white vinegar, butter, salt, and garlic.
