I overcooked the potatoes a little so all I needed was to smash them with a fork. I added one egg and 1 cup of flour. it's very sticky and doesn't look like dough. What should I do?

Gnocchi is sticky...it is a dumpling not a noodle. In other words many people expect Gnocchi dough to be like regular dough and it is not. If it is really unmanageable and you cannot handle it at all use a some flour to make it more easy to manage. It should be fine. :)

My wife makes gnocchi and it is definitely my favorite dish. And, indeed, her hands are a mess when she is done preparing it. I believe it is supposed to be sticky. If you are sure it is TOO sticky, then add flour 1 tablespoon at a time until it is more manageable.

Add about 1/4 a cup more flour n see how you go
Adjust with a little more egg if you get it too stiff

i think gnocchi is meant to be a little sticky but spray them with canola spray and they wont be as sticky next time oh and also gnocchi is potatoes not pasta!! remember that kiddies lol wait i am a kiddie

it should be sticky, and not too watery either... if it is very sticky than add some flour, a spoon at a time. if you add too much flour, than it will be tasteless
