Any kind of quality olive oil.
Balsamic vinegar is wonderful.

It is mostly up to your imagination.

The Olive Oil to use is more likely to be the heavier, fruitier, more pungent, deeper yellow or green, higher quality, more expensive ones called Extra Virgin.

Vinegar used is all over the map. The vinegar essentially provides acid, and can be but doesn't need to be a vector for flavor. Time was you had a choice of either tarragon or red wine vinegar, but nowadays there are hundreds of choices. The most luxurious are the black Balsamic vinegars that are aged in casks for years like fine wine.

My favorite pairing right now is a California Extra Virgin Reserve and a ten year old Balsamic vinegar; both of which I got from Trader Joe's.

But other times I make other pairings like an Orange Muscat Champagne Vinegar with Grapeseed or Walnut Oil.

I prefer a red wine vinegar and a ordinary imported olive oil for salad dressings: 1 part vinegar to 5 parts oil is about right. Try flavoring with Dijon mustard, some honey, poppy seeds, herbs, garlic, or any aromatic! Bon Apetite!

Olive oil is a type of oil and vinegar use white vinegar---you can use canola oil as a mixture with the olive oil

Any extra virgin olive oil will do. Balsamic vinegar or red wine vinegar is best but regular white vinegar will also do.

Wine vinegar with a very few drops of Balsamic vinegar and extra virgin olive oil.

However, I prefer to use lemon juice.

well......... you can use white or black balsmic vinegar, white or red wine vinegar. the best oil to use is olive oil.

for a simple salad dressing, combine oil and vinegar of your choice and salt and pepper to taste. to this add either a bit of mustard (again of your choice) garlic and/or mixed fresh herbs
