Christmas, Spring breaks, Ski weeks, Washington's birthday and early summer are usually the periods with no ticket "discounting" or "sales". September and after Thanksgiving can be slow with some deals being offered.
From the West Coast $500 - $600 is a good acceptable average for flights to Hawaii, Maui or Kauai. Below $500 is great and you should grab it. $700 and over; only if you really want to go on those dates. Honolulu should be about $75 less than to the other islands.
If you buy directly from an airline, even after you buy a ticket keep going back and repricing your itinerary. If it drops below what you paid the airline should issue you credit for the difference to be used for future travel.

My family and I actually went to Hawaii back last summer and we found that it would be cheaper to go through a local travel agency than what it would be to try to get tickets and hotel and everything on our own. Through the travel agency it was only $5,000 or so for five people to go and that included round trip plane tickets & a weeks hotel pay. And we stayed in a 4 star hotel right across the road from Waikiki Beach. So that would be my suggestion to you...check around with local agencies and see what kind of deal they can make for you.
