I sprinkle garlic powder, white pepper and salt on both sides of the salmon, 10 minutes later, I heat some oil over medium heat, stir fry some garlic slices to make a fragrance, add salmon to the pan, pour 1 tablespoon white wine in the pan, fry each side for about 2 minutes, squeeze some fresh lemon juice over the cooked salmon. Turn off heat, serve salmon with mayo or tartar sauce.

make a mix of 6 parts sugar,1 part salt with blackpeppercorns and herbs of your choice,pack it all over the fish,wrap and leave up to 24 hrs,wash off,.get you pan hot with a little oil,place fish in and sear,watch it though,the sugar in the fish will burn quickly,when a nice dark colour,turn over and repeat,cook smaller than larger pieces,eat straight away,medium rare is perfect,try it,its fantastic..
