Is it safe to ferment wine in plastic containers?

Can I use bottle caps instead of Corks when it comes to covering the bottle because , I have no corks available.

How many yeast should I use per gallon?

Yes, you can ferment grapes/juice in food grade, sanitized plastic fermenters. Pros do it all the time. Glass and stainless steel are preferable b/c of the ease of sanitation.

Bottle caps are fine for wine, as long as the wine has finished primary and secondary fermentation's and is microbe stable. Its really the same thing as a screw cap.

Use .68 grams of wine yeast per gallon(1.5#/1000Gallons), prepared as instructed.

It is best to use glass.
If you have a sealing tool for your bottle caps the only problem, is the pressurization of the bottles by secondary fermentation, (they could explode). Corks are not that expensive.
A proper wine yeast is the best, instructions are on the sachet.
You could buy a second hand wine makers book, you will be amazed what you can make wine from. Good luck

You're best off using corks.

Corks help hold in the moisture of the wine, keeping it fresh.
While storing a corked wine bottle, it's best stored up-side-down.
You can use bottle caps, but it's not suggested.

As for yeast, I have no idea. Sorry.
