I have a cooler which also works as a heater. Will food be ok if kept warm over period of hours (8 to 10 hours)? For instance, if I heat up a pasta dish in the microwave and then place it in my heater for 10 hours will it still be good?

my cooler/heater does not cook the food, it just keeps it warm. I'm not sure what temperature. I would actually like to keep food warm for closer to 4 or 5 hours.

If it stays above 140 degrees, it will be fine. If it's kept between 40 and 140, then it's in the danger zone, and is in the perfect temperature zone for bacteria growth.

No. According to Federal Health Regulations, no food should be held for no more than 8 hours, even if held properly at a temperature of at least 135F.

But, if you were to do this at home, to reheat pasta, it would turn out rubber-like, espically heating it up from the microwave. If you were to cook it and keep it hot, then maybe 1 hour. By then the pasta dries out and is pratically no good.

For health reasons, I wouldn't suggest doing that at home. If this is a commercial business you're talking about, then no, you can't do it legally without breaking health regulations.

If it is hot enough to kill bacteria it will be o.k - such as a pot of soup simmering on the stove top. However, if pasta were kept that hot for 10 hours, it would probably turn to paste. BTW, did you know that cooking in the microwave destroys most nutrients in foods and (most importantly) eating foods cooked in the microwave changes your blood including raising cholesterol.

pasta should be cooked al dente and served hot from the pan, not re heated.

no you are killing any vitamins ans stuff found in the food if you heat it up fo 10 hrs.

I dont think it would taste too good if it were heated up for 8 hours. It would probably be burnt or rubbery.

Tim, Your scaring me. Don't do it, mainly you will end up with food poisoning and that could possibly kill you. Find some other way. Promise you won't do that.

great question,most pasta dishes if kept at 120-140 range are fine................although may begin to dry out.....at long periods.
