What would we sell? Probably stuff not already available in stores. Like fruitcups and whatnot. We can make stuff, we just need ideas of what to make keeping with the healthy theme. We also would like our concession to be pretty cheap for the youth, and the concession can pay for itself.

Whoops. Yes, we'll buy the stuff from the stores, but non-packaged. My last comment didn't make much sense, sorry. Basically, we want to sell stuff they wouldn't find in a package at a store.

You can make your own Trail Mix by purchasing individually large quantities of Chex cereal, raisins, cranberries, nuts, tiny pretzel knots, and throw in some M&Ms (a little chocolate won't hurt) to make it even more appealing.
Package them in inexpensive sandwich bags, either the ziplock kind or regular ones tied with a ribbon. Sell them for $1. If you have any kind of "Dollar" store nearby, I bet you could get most of the ingredients and bags there, which will really boost your profits. Good luck!

Vegan tortillas.... rice, beans, salsa
Fresh fruit smoothies (banana and orange are easy AND terrific)
Haystacks (an Adventist staple: nacho chips on the bottom, topped with hot beans, lots of veggies cut up small, shredded cheese, and a dollop of sour cream)
Vegan Sweeties: blend together soaked dates (minus the pips), coconut, almonds, almond butter, and a tablespoon of honey. Roll into balls.
Different kinds of fresh apples, etc....

Fruit smoothies using yogurt or almond milk (best) sweetened with stevia. This could also be frozen as pops. Trail mix with nuts, dried fruits. Homemade granola bars using oats, sesame seeds, nuts, dried fruits. A few kids might like salads. Hard-boiled eggs, pickled or not. Dill pickles. Pop-corn wouldn't be too bad. Chicken strips (breast cut in strips, rolled in bread crumbs or crushed corn flakes and baked) served in whole wheat pita wraps with lettuce, etc. or in baskets with a sauce.

You can try fruit, nuts, yogurt, cereal bars, fruit roll ups, popcorn, pretzels, muffins, smoothies, granola bars, raisins, dried fruits, cheese sticks, cheese and crackers, soup, corn on the cob, rice krispie treats, chex mix, trail mix, power aid drinks, Gatorade drinks, vitamin water, bottled water, milk, cranberry juice, apple juice, orange juice, mango juice, fruit punch juice, gram crackers, pickles, baked potatoes with or without cheese, or cheese and brocolie. If you cut up fresh fruit and mix with vanilla flavored yogurt, it will keep for hours and taste sweet. You can also add nuts or coconut to it.
You can also make baked potatoes and keep them in foil in an ice chest and they will stay hot. just have butter and sour cream on the side for them to add.
String cheese too.
