6 lg green peppers
1 lb hamburger
2 tblsp chopped onion
1 tsp salt
1/8 tsp garlic salt
1 cup cooked rice
1 can (15 oz) tomato sauce
3/4 c shred mozz cheese
cut thin slice from stem end of each pepper. remove seeds/inside, rinse. cook peppers in enough boiling water to cover 5 mins, drain
cook & stir hamburger, onion in skillet until burger light brown, drain. stir in salt, rice (cooked), & 1 c of the tomato sauce, heat through
stuff each pepper w/burger mixture, stand peppers upright in ungreased baking dish (8x8x2). pour remaining sauce over peppers. cover, cook in 350' oven 45 mins. uncover, cook 15 mins longer. sprinkle w/cheese.

Couscous-Stuffed Pepper
Chickpeas and couscous combine to give this low-calorie dish a high protein score.
6 large bell pepper (red, yellow, or green) slice tips off to make lids. Scoop out membranes and seeds and discard. In large saucepan of lightly salted boiling water, simmer peppers and lids covered, 5 minutes. Drain.
Preheat oven to 350 deg F.
Heat 1 tbsp vegetable oil in medium saucepan over medium heat. Add 1 small zucchini, finely chopped, 2 cloves garlic, minced. Saute 2 minutes. Stir in 1 tbsp fresh-squeezed lemon juice. Cook 1 minute and remove from heat. Stir in 2 cups cooked couscous, 1 can (15 ounces) chickpeas, drained and rinsed, 1 ripe tomato, seeded and finely chopped, 1 tsp. dried oregano, crumbled, 1/2 tsp salt, and 1/4 tsp black pepper. Stir in 1/2 cup crumbled feta cheese.
Fill each pepper with couscous mixture. Place upright in shallow baking dish. Cover with pepper tops.
Bake just until filling is heated through, about 20 minutes.

i love them too. i boil my pepper for about 3 min to take the bitter taste out of the pepper. then i make my ground meat with cooked rice. many people use tomato sauce but i use tomato juice instead. taste so much better to me and it isn't a tomato tasting. i don't pour the tomato juice on until i have all the peppers in a pan and stuffed. cover them and cook them about an hour. excellent

a lot of people put rice in them, steam the peppers a Little before you fill them , you make them the same way you make meat loaf .bake about a hour @ 350 put a little tomato sauce on the top the last 30 min.

I love them,
I make my mothers recipe for meatloaf and stuff the mixture into the peppers and bake until the meatloaf is done.
You can even make a double or triple batch stuff the mixture into the peppers and freeze until you are ready to cook them. or you can even cook them freeze and when you need a quick meal pop one into the microwave until hot yummy
