Split Pea Soup

1 1/2 cups green split peas
1 large onion, peeled and chopped
2 celery stalks, chopped
1 large leek, chopped
1 large clove of garlic, halved
1 herb bouquet*
1 or 2 well-washed ham hocks
Salt and Pepper
Optional garnish - small toasted croutons

*Herb Bouquet: Tie 3 cloves garlic, 4 allspice berries, 2 bay leaves, 1 teaspoon thyme, 8 sprigs parsley in washed cheesecloth.

1 Pick over the peas and remove any stones. Wash and drain peas. Place in a 4 quart pan with the vegetables, herb bouquet, ham hocks and 2 1/2 quarts of water. Bring to a simmer. Skim the scum off the top of the soup for several minutes, until the scum ceases to rise. Cover loosely and simmer about 1 1/2 hours, or until peas are tender, stirring occasionally in case they stick to the bottom of the pan.

2 Remove bones, and herb bouquet from soup, discard. Either purée through a vegetable mill, or purée in a food processor and then pass through a sieve. Correct seasoning.

3 Reheat, taste again for seasoning. Ladle into warm bowls and garnish with croutons and or sautéed ham.

All these answers are right but I use a combination of most all of them myself. Soup, like any dish, is a matter of personal likes and dislikes. I've even used some potatoes with the ham and split peas to help thicken the soup without cooking the peas to mush. Like lentil soup. Excellent! Have fun and enjoy your creative side.

Vegetarian Split Pea Soup
2 quarts water
8 tsp approx. chicken soup base or Vegita
2 cups split peas
2 carrots chopped
2 stalk celery chopped
1 medium onion chopped
cook until soft about 1 hour.
Puree until smooth with immersible blender or with Cuisinart blender

I dump them in the crockpot with a ham hock or two, about 6 cups of water, diced up carrots, diced onion, and some celery. Then a big spoonful of minced garlic, 4-5 bay leaves (fresh are best, but dried work fine), a diced potato, a good sprinkle of marjoram, salt and pepper. Cook on high until everything's mushy!

(Check for consistency, you might want to add more water depending on how thick you want it.)

All I do, and it is very yummy too, is drop in my split peas into a crockpot with 6 cups of water, 3 hamhocks, 3 bayleafs, and some baby carrot, let cook for 6 hours, and your are done.

Get a ham bone, boil it for hours, add a cup or two of the split peas, diced onions, carrot, Yum Fairly easy! lots of recipies on the net.
