Well technically anything that is in a can can keep that way for long long periods of time... you know Peary brought cans of food to the north pole and some dude opened it like a few years ago and it was still fresh!!!!
the only time you can't eat the spam/any other food that is when the can is bulging out because it means that it has bacteria and you can get food poisoning
SPAM isn't really fresh anyways.....so I take it that you mean that it stays unmoldy and everything
