I use my own canned fish but any can of fish will do. I use a pint of fish.
Beat one egg
add the fish with the liquid
pepper to taste
Crush one sleeve of crackers fairly fine and add, saving enough to roll the patties in.
Mix well and shape into patties and roll in cracker crumbs
Fry until golden brown on each side.
We think these are the best fish cakes.

Fish en Papillote

This is a particularly great recipe for kids for two reasons: they love to help put it together, and it can be modified to leave out any ingredients they don’t care for -- or to add others they like.
2 potatoes (about 1 pound), peeled and thinly sliced
Salt and freshly ground black pepper
4 6-ounce pieces of red snapper or other fish
1 tomato, cut into ¼-inch dice
1 zucchini, cut into ¼-inch dice
1 yellow squash, cut into ¼-inch dice
1 red bell pepper, cut into ¼-inch dice
4 fresh basil leaves (or 1 teaspoon dried)
4 bay leaves
½ cup dry white vermouth or wine
Preheat the oven to 400 degrees F. Arrange four large (12 by 20 inches) rectangles of heavy-duty foil on a work surface, shiny side down. In the center of each, spread out a quarter of the sliced potatoes. Season with salt and pepper. Place a piece of fish on top and season with salt and pepper. Arrange a quarter of the diced tomatoes, zucchini, squash, pepper, basil and a bay leaf on top. Sprinkle with a little more salt and pepper.
For each serving, bring together the short edges of the foil rectangle high over the fish. Pour 2 tablespoons of wine over each piece of fish. Crimp the top edges of the foil to form and airtight seal.
Place the papillotes on baking sheets and bake until the foil is puffed and the fish inside is cooked, about 20 minutes.

My Mom used to deep fry the fish (whole or slices), set aside, then heat up sweet & sour sauce and pour over the fish. The sauce is home made and very easy: ketchup, water, a bit of soy sauce, add fresh peas/tomato/pineapple/peppers/onions, anything you fancy.
This dish goes well with rice. We loved it when we were kids, and we still do!

Makes 4 servings. Prep time: 5 minutes (plus optional
marinating). Cooking time: 8 to 10 minutes.
Juice of 2 limes (about 4 tablespoons)
3 tablespoons finely chopped fresh cilantro
2 tablespoons olive oil
1-pound salmon fillet, cut into 4 serving portions
1 tablespoon garlic flakes or 1 teaspoon garlic powder
1 teaspoon sea salt (optional)
Freshly cracked or ground black pepper
1/2 cup prepared Mango-Peach Salsa
In large zip-type food storage bag, mix 1/2 of lime juice, 1/2
of cilantro and olive oil. Add salmon; turn bag to coat
fish. If desired, marinate 30 minutes or up to 8 hours in
refrigerator. Meanwhile, to enhance salsa, add remaining
juice and cilantro. Chill, if desired. To cook salmon: Heat
countertop grill or grill pan. Remove salmon; season with
salt, pepper and garlic. In covered grill, cook 7 to 9 minutes.
In grill pan, cook about 5 minutes per side. To sear,
transfer fillets to broilerproof pan; broil 1 to 3 minutes,
watching closely. Plate salmon; top with salsa. Serve
with mixture of steamed asparagus, sliced avocado and
strips of yellow bell pepper.
Per serving: 319 calories, 23 grams fat, 67 milligrams
cholesterol, 275 milligrams sodium, 5 grams carbohydrate,
24 grams protein.

I don't have exact measurements here BUT:
You need about a pound and a half of tilapia.
Cooking oil and margarine
1 cup Buttermilk
1-2 cups Mashed potato flakes (instant potatos)
Garlic clove (Or you can skip the garlic for little kids)
Salt and pepper.
Chop garlic and place it in a medium size bowl. Put about a cup of buttermilk in the bowl. Add salt and pepper.
Place mashed potato flakes on a plate.
Preheat griddle or shallow pan with cooking oil and margarine.
Dip each tilapia filet in buttermilk mixture, then coat with potato flakes. Saute in shallow pan until golden brown, turn and continue till fish is cooked thoroughly. It doesn't take long.

Salsalito Salmon
1 pound salmon
1 cup mild salsa
1 cup mayonaisse
1 clove garlic
Canola oil
Chop garlic.
Cut salmon into serving-size pieces.
In mixing bowl, place garlic, salsa and mayonaisse. Mix well.
Preheat non-stick pan on medium-high and place about a tablespoon of canola oil in pan.
Dip each piece of salmon in salsa mix and saute. Cook both sides until fish is done.
Pour in the remainder of the salsa mixture over salmon and heat on low until the mixture is warm.
Excellent over rice.

my kids like fried fish fillets. Dip the fillets in egg, and then in corn flake or bread crumbs, and then fry. They love 'em!
