Hello =)
It can stay out of the fridge, but I wouldn't recommend next to the stove...... High temperatures make animal fats turn rancid. Could it be put a few feet away from the stove??
Bacon fat is naturally stable once liquefied (rendered) just like lard. They both need only be stored in a "cool dry place".....
Namaste,

I have kept bacon grease in a closed container in the cabinet next to my stove all of my life. If not used for some time, it will smell rancid, but otherwise you can use it.

Since it is rendered from meat, it will go rancid. It definitely needs to go in the fridge. It is the same as leaving cooked bacon out, covered next to the stove.

My parents always kept it in a special container right on the stove (between the back burners). I don't remember them ever having problems.
The big rule of thumb is "If in doubt, throw it out!" If it smells or looks even the least bit funky, toss it. Sanitize the container and start over.
Keeping it in the fridge definitely won't hurt it, and it might be safer. But, really, it's been out on the counter for hundreds of years. If you get sick from it, it would be really fluky.

My Gramma used to keep drippings in a can on the stove. I never got sick eating her fried eggs, hash browns and bacon.

Hi !!
I keep my bacon grease in a medium size see-through jar, just to be on the safe side, but I have talked to many elderly southern cooks that have always stored their bacon grease on the counter by their stoves and had never had a problem with it going rancid on them. Please be sure and read the forum site below to get a few other perspectives on this matter.

You can choose to keep it either way. My Grandma always kept hers in a special container by the stove but in the summer time she would also keep some in the fridge in a special glass jar with lid... I keep mine in the fridge in a baby crock with lid...
