If you mean like a Panini, like the ones made in a sandwich press I have a trick if you have a grill or you can make on stove top in a saute pan.
In the saute pan make your sandwich on a good thick bread, I like to use Italian bread, but what you wanna do is take a bowl and put the parm in there with some butter melted and make a kinda paste, add some salt and pepper. Then heat up your saute pan, spread some of the paste on the outside of the bread, top and bottom. Then put some regular butter into saute pan warm enough to make it sizzle quick and then put your sandwich in there right away while that butters sizziling, thats what will allow that crust to form, give it a good press down. If you want take a stockpot and wiegh it down with a rock or something heavy but sturdy, and press it down on top allow to sit for minute or two to brown and flip.
Same concept for grill but try to use butter spray on grill and allow to toast.
Enjoy. you can use different herbs too!
