Pasta; use the sauce from the chicken over pasta (use a store bought fresh pasta from the refrigerated section of your grocer) or some good extra virgin olive oil and more cheese. A good simple salad could consist of baby spring greens, crispy proscuitto ham that you have baked in the oven, shaved parmesan and a few crisp cooked asparagus ( three or four minutes minutes and then ice water to stop cooking process) with an italian vinigarette.
I think it's also a great idea to pound your chicken into very thin cutlets. Place chicken between plastic wrap or wax paper and pound with the bottom of a flat bottomed heavy pot or skillet.
Oh,and don't forget the garlic bread

I love serving this Italian dish with a pasta. Either spaghetti, ravioli or angel hair. Usually I've made a homemade tomato sauce to go over it but a pesto would be good too.
Always an antipasto or salad on the side. Or you could serve the antipasti as an appetizer.
Garlic bread or a crusty Italian bread is great with it to sop up the "gravy".
For dessert, maybe a tray of goood cheeses and fruit. Pasta is a heavy meal, so it only requires a light dessert.
And of course, a good Italian red table wine.

This side dish has a nice bite, off sets the color of the Chicken Parmesan perfectly and has a delightful aroma. Sugar snap peas in balsamic vinegar. The recipe is easy and goes as follows:
Take the sugar snap peas; rinse, drain and snap off their ends.
Toss them into a pot of boiling water for three minutes.
Drain again, rinse in cold water.
Throw them into a pan on medium-high heat with a little virgin olive oil.
Heat up while adding a touch of salt, white pepper, Italian seasonings (thyme, rosemary, oregano, etc.), then a little more than a splash of balsamic vinegar at the end.
Serve.
McCormick has a bottle of Italian Seasoning Mix that makes this dish even quicker to prep. You can find it in the spices section of almost any grocery store.
Add a traditional house salad next to this, fresh sliced Italian bread (thick cut with virgin olive oil on the table for dipping), a nice dry white wine, taramiso for desert (any local bakery should have this), and you're good to go!

Of course your main accompaniment would be a pasta like a thin spaghetti in a rich Marinara sauce.
Don't forget to add garnish! Sprinkled dry parsley on the rim of the plate and/or Sprig of fresh parsley too!
A rich salad of mixed greens (not iceberg) with a light Italian dressing and seasoned croutons.
Choice of Italian Bread cut into nice thick chunks served with a side dish of olive oil, balsamic vinegar and a little red pepper flakes if desired or

Serve dinner with a nice merlot, shiraz or even a zinfindel

With chicken parmesan, I would pair it with some pasta on the side, nice crusty bread (french, Italian, or Focaccia) and serve it with extra virgin Olive Oil and pepper for dipping (similar to how it is served at some Italian restaurants). You could also add a nice caesar salad. For dessert, you can't go wrong with something simple like brownies. You could always stir some marachino cherries into the batter for a nice twist.

Chicken Parmesan goes great on a bed of fettuccine. If you want to add some color to the dish, try using the spinach fettuccine. Make a romaine and spinach salad, with cherry tomatoes, cucumber, and sliced fresh mushrooms, tossed with you favorite vinaigrette. Serve warm rolls with a garlic butter or garlic bread. Most likely your guests will be stuffed, so have a light desert. I found a recipe for "poached pears with sweet wine and fruit confetti." Check it out, and Good Luck!!

I would toss some cooked spaghetti w/ some butter, grated Parmesan cheese and chopped parsley. Make a nice garden salad. Some garlic bread and maybe some lightly sauteed yellow squash and zucchini. Dessert - sorbet or sherbet, after a big meal you want something lite.

Olive Garden Parmesan Crusted Chicken Recipe Serves/Makes: 2 Ingredients: 1 cup Plain Bread Crumbs 2 tablespoons Flour 1/4 cup Kraft Parmesan Cheese 1 cup Milk 6 (1/2") Thick Pieces of Chicken Breast Strips (chicken tenders) Vegetable Oil ( frying ) 2 cups dry Bowtie Pasta 2 tablespoons Butter 3 tablespoons Olive Oil 2 teaspoons Crushed Garlic 1/2 cup White Table Wine (Chablis) 1/4 cup Water 2 tablespoons Flour 3/4 cup Half and Half 1/4 cup Sour Cream 1/2 teaspoon Salt 1/8 teaspoon Basil Leaves 3/4 cup Mild Asiago Cheese ( finely grated) ***Garnish*** 4 Broccoli Florets (lightly steamed) 2 White Mushrooms (quartered lightly steamed) 1/4 teaspoon Crushed Red Pepper Directions: Prepare pasta according to package directions. Wash and drain chicken strips. Mix breadcrumbs, flour, and Parmesan cheese together. Place milk in dish for dipping. Dip chicken in breadcrumb mixture and then in milk and then back in breadcrumbs. Place in fry pan that the oil has bee heated and fry at medium to medium low temperature until golden. Remove and drain chicken. In a saucepan on medium heat, melt butter, add olive oil. After you make the chicken parm, just boil some spaghetti noodles and after you drain them do not rinse them and add like a 1/2 tbsp of olive oil and mix them up, place them in a circle on the plate and top with some sauce, just a little and then place a chicken parm on top of that and garnish with parm cheese and parsley. VERY NICE presentation. Add to this a nice salad with mixed greens, a light olive oil and vinegar dressing with some lemon wedges, top salad with tomatos and some veggies and then have some wine and crusty bread.

Well if you were serving it on pasta (like I do) I would say that's enough starch. So if you want to add a vegetable, I'd say sweet peas or broccoli, although a salad never goes wrong. For dessert, a nice truffle bowl would be impressive. A truffle bowl is a layered dessert with a layer of chocolate pudding, then brownies, then raspberries then repeated. I served it in a truffle bowl. It was a hit at a 4th of July party
