It really depends on:
how well the can is sealed.
the temperature range in your garage.
Where sealing is concerned, if the can is slighly open, the paint starts to dry out. It gets thicker and thicker, and a skin forms on top. If you leave it long enough, the whole can will solidify. If you use the paint at the thickened stage, all you have to do is to add water and stir it thoroughly. If it gets to skin stage, you can knife off the skin, add water, and stir it thoroughly. However, the quality of the paint will not be quite as good, because the mix of the paint will be off (due to what formed the skin). You can stave off the skin formation for a while by putting a little bit of water onto the surface of the paint before you seal the can. The water will last a year or two and prevent the skin from forming.
As to temperature extremes, freezing and extreme heat will affect the quality of the paint over time.
With a well sealed can, a bit of water on the top surface, and moderate temperatures, it should last several years, however there is some chance the color may change very slightly due to changes in the pigments over time.

You want to know how to save it. Get some wax paper from the kitchen. Now cut a circle, the same size as the inside of the can. Set the paper directly on the paint. It is like you made a smaller paint can.
Take it out when you want to use the paint.
{probably 4 years) for storage period. I have held it for longer and it is still is good.

I'm a prof.painter and have seen paint last for years,but the only way your going to know for sure is open the can. If you shake the can and you hear liquid moving around that's a good sign.If you open the can you will have to stir it for several minutes and see if it mixes. if it gets all the same color and has some thickness to it ,it's probably OK.If its thin and watery its probably no good.
