I am making chicken and the recipe tells me to sautee the mushrooms in the same pan as the chicken was previously cooked in. Is this safe? Will I be subject to any bacteria from the chicken?

No -- once you cook the chicken, there's no risk of bacteria in the pan you cooked it in. The risk is only if you put the raw chicken in a bowl before cooking it, then later serve it in the same bowl without washing it first. Once you heat up the pan for cooking in it, there's no risk of bacteria.

It's not only safe, it's delicious. The mushrooms will soak up the (cooked) juices from the chicken and any seasonings you used. I'm making something very similar for dinner tonight, but with a whole pork tenderloin and dried porcini mushrooms, to be served over polenta. Mmmmm... I'm getting hungry just thinking about it!

Keep sautee the mushrooms in the pan with medium heat, add a little bit of cooking wine and you will a good stir fried chicken & mushroom. You may also add some oyster sauce or soy sauce to the pan, toss to combine, serve hot.

A lot of good pan sauces for chicken are made in just this way - like chicken marsala. As long as the chicken has been fully cooked when it leaves the pan and the pan is over high heat, you should be fine.

The residue on the bottom of the pan is called the yum yum... when you put the mushrooms in the pan the liquids they produce will loosed up that flavor coating on the bottom and incorporate it back into your dish. Delicious. Go for it.

No... it is only a few minutes later is it not... what ever would happen in just a few minutes except that the mushrooms would absorb the flavors of the chicken and whatever seasonings you used?

well depending on how long the chicken has been cooked and if you deglaze it or not there won't be any harmful bacterias in it i believe. So i guess it is safe.
