I know that the animals that exist in certain climates are forced to adapt to the enviornment. Animals that are not balanced in living eventually fail to reproduce due to dying off because of not being suited to the environment. But how come the animals say... the penguins... some without not enough fur will die, but what if all of these penguins had not enough fur? According ot this logic, all living things could eventually die out, especially if the earth ends up too hot or cold in the future.

First off, penguins are birds and do not have fur - they have feathers.

The idea behind survival of the fittest is that there is always genetic variation. So whoever has the veriation best suited to the environment will have a better chance of feeding itself and its young. Also, it will be more likely to be able to survive the conditions in the area, as well have increased mating success.

Animals and plants and basically everything will either adapt or become extinct.

If you look at the fossil record, just about everything eventually does adapt or go extinct. Mostly, things go extinct.

However, some things such as sturgeon and turtles are well-enough adapted and live in stable enough environments that they can persist basically unchanged for hundreds of millions of years. Some bugs have done this, too.
