Is it a missing nutrient or chemical in the food that causes us to crave it?

It is a missing nutrient (or so I've heard). My grandmother used to crave ice all the time, and it was because she was iron defiencent. Usually what you are craving has nothing to do with what your body needs, so if you are having massive cravings maybe you should see a doctor and find out what you are missing.

Food cravings may be caused by any number of things. Lack of certain vitamins or minerals can be the source. Most of the time, it is psychological, probably based on past experience with the desired taste. Think of it as a memory link between your taste buds, olfactory (smell) and some pleasant experience (memory). These centers are very close to each other in your brain,Connections are formed in early childhood.

Some say that if your body needs it then it craves it(nutritional deficiency?). I also think it has something to do with when youre really hungry, STARVING, and the food that you ate to nourished your body, your body becomes attached to it.

10 years ago I never ate beans and rice before, but I was STARVING for 3 days without food and finally the only thing I had to eat was beans. Ever since then I crave beans and rice, the bland kind, just beans and salt, not much flavor, but thats what I ate when I was starving, and now I crave it.

Same for asian people who eat dogs, they love their pet dog, but was STARVING. They eat a dish thats made with dog, banana root, and sour rotten rice. I can imagine that moment, nothing to eat for weeks, sour rice rotting away, they ate everything on the banana tree, now with the dog just tied to the stump of it.

They put 1+1+1= SURVIVAL. 20 years later they have plenty of food, but still crave that dish. They would sour/rot/"ferment" the rice for months, dig up a banana root, and skin a fresh dog to satisfy their cravings.

I would like to find more "scientific" views of this, this is only from my own personal view witnessing it and guessing about it.

According to a doctor that I watched on Oprah a day or so ago, it has to do with hormones. When a woman is pregnant, she is very hormonal and craves salty, sweet or combinations of both. Women are very hormonal around their menstrual time and are subject to cravings. So, it's not just all in our heads, its in our hormones.

There is an added ingredient that makes you crave it. Fast food restaurants add it in their foods. Chocolate-because it has theobromine in it.

It's totally psychological. When you think of something you really like to eat, you can actually start salivating. Weird, but true..
