I think (know) that you would like the results of the true duals with the headers, youre half-way home why stop now??!!??
Get another cat and a muffler, a set of headers, and do it all. Why not? If you want to get the most possible gains out of your modifications why do it part way to go back a redo it again later. Adding the second pipe later is no really big deal but since you are under there doing one cat why not just do it all at once?
(I am not talking out my a55 here. I have bent exhaust pipe since 1988 and have done MANY systems. I never understood why some people do a half way job, to have to go back and mess with it again later when they knew what they wanted to begin with!)
Get everything, the headers, the reducers and gaskets, the cats, O2 bungs, mufflers and your tips if you are using them, dont forget the hangers, and just do it all at once and forget about it. You will love the results in the end!
2.25 " inch pipe ought to work pretty good on there, 2.5" MAX! Nothing smaller though. And you don't need a crossover tube, that's a "Chevy guy" myth!

Headers will give you more performance and a much better sound than you're already getting. I'd suggest that you save the money to get the headers first and do the true duals later. Adding duals without changing over to headers won't give you much gain. It will only give you another pipe coming out of the back.

Headers and true duals with flowmaster 40's would give you better performance than one pipe and muffler. Go with 2 high flow cats, and also open up the air intake with a K+N cold air intake, the better an engine breathes the more power you will get.

Having an '01 Ram 1500 with a 5.9 as wel, I'd agree with the mech fella who posted last do what he says and you'll get unrivaled sound and power from anything in its class. I did myself. True-dual Flowmaster 40 series with new o2 sensors cat and headers. Nothing in my area can compete.

you can probably add about 20 to 25 hp, with headers, high flow cats and flowmasters with the true dual exhaust setup.

you can use the headers with the system you got and it will help it a lot,that sound s like it might be your best way out on this one,,even if it don't help it that much,,you can add dual exhaust from this point ,,and it will really boost it up,,but id go with the headers first and see what that does for it,,good luck hope this help,s
