Some questions to ask yourself....
How long have you been together? If the relationship is still fairly new, it could be her nerves.
Does this just happen once a month? Could be her menstrual cycle.
Have you been active? Pregnancy causes these symptoms. (among other things)
Does she look pale when this happens? Could be a blood pressure problem which would cause the cold hands.
If you are really concerned that it might be a health problem I would suggest you try to talk her into seeing a doctor. Don't be too aggressive though, it might end you in the dog house. Hope this helps.

You can try to google the symptoms. Although, I have mood swings too. It could be hormonal, she could be anemic, anxiety, medication side effects, or a wide variety of things. A simple blood test can rule things out for you. Do some research on the web, but I recommend a couple of things in the meantime.
1. Get her to the doctor.
2. Try to be understanding and go with the flow of things when her moodswings are in full swing.
If she refuses to go to the doc, communicate to her how you feel about her and that you just want her to be healthy. Good luck. I hope things work out.
