Most "crustless" cheesecakes do, in fact, have a crust. It is usually flour mixed with lemon zest and sugar and glued together with a little butter. I do that sometimes for my crust.

I don't like Grahm Crackers either. I make a lot of cheesecakes. For the crusts, I use Oreo cookies! Put the whole oreo's into the food processor until fine crumbs (about half a package per cheesecake). Toss the crumbs with some melted butter enough to make it sticky. Pat in springform pan. Bake it for about 9 minutes at 450. Remove from the oven and pour in your batter for New York Cheesecake. IF you have leftover crumbs or a whole cookie, you can put it in the center of the cake. I mound my crumbs in the center like a little brush pile. Then put it back in the oven at 450. After 10 minutes, reduce it to 325 and let cook an additional 40 minutes or more until done. Bon Appetit!

You can use a variety of cookie crumbs or nuts. You may want to try macaroons, oreos, Peanut butter cookies, almonds, pecans, peanuts, etc Or combine a nut and a cookie. Just choose one that compliments you filling.

Gingersnap crust: (good with a pumpkin cheesecake)
1 1/2 cups gingersnap cookie crumbs
3/4 cup ground hazelnuts
3 Tbs brown sugar
6 Tbs unsalted butter, melted
Using a fork, combine gingersnaps, hazelnuts, 3 tablespoons brown sugar and melted butter. Press mixture onto the bottom and two inches up the sides of the pan to form the crust.

Chocolate Peanut Cookie Crust (chocolate/PB cheesecake)
11 chocolate sandwich cream cookies, crushed
3 Tbs chopped peanuts
3 Tbs butter or margarine, melted
In a small bowl stir together crushed cookies and peanuts. Stir in melted butter or margarine till well combined. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan.

Vanilla Cookie Crust
40 vanilla wafers, crushed
6 Tbs butter, melted
In a medium bowl, stir together vanilla wafer crumbs and butter. Press the mixture into the bottom and 1 3/4 inch up the sides of an 8 inch springform pan.

Try using some shortbread cookies from the store.(peak frean cookies)..crumble those up instead of using the graham crumbs*
or you can do the same with Oreo cookies , crush them up and make for the bottom*
