BAKED STUFFED EGGPLANT:
2 large eggplants
16 oz. mushrooms, sliced
1 Tablespoon oil
1 1/2 lbs. lean ground beef
1 large onion, chopped
2 (8 oz.) cans tomato sauce
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon oregano
12 oz. mozzarella cheese, shredded
Wash and cut off stem of eggplants; cut in half lengthwise. Scoop out leaving 1/2-inch shells; cube centers. Arrange eggplant shells in baking dish.
In large skillet, saute eggplant cubes and mushrooms in oil for 6-8 minutes or until tender; and set aside.
In same skillet, brown ground beef and onion; drain off excess fat. Add eggplant mixture, tomato sauce, garlic powder, salt, pepper and oregano. Simmer for 5 minutes, stirring occasionally.
Spread eggplant-meat mixture into the eggplant shells and top with mozzarella cheese.
Bake at 350 degrees for 30 minutes, or until heated thoroughly. Let stand 5 minutes before serving.

Bacon Cheeseburger Meatloaf (everyone in my house loves meatloaf)

1 1/2 pounds of lean gound beef
put in a large bowl and add the following;
1 cup of ketchup
2 eggs
1 1/2 cups of seasoned bread crumbs
1 tsp of worstershire sauce
salt and pepper, heavy on the pepper
diced onion , if you like them
cheddard cheese cubes,

mix all things together, best to just use your hands, knead it like bread dough to mix well. then shape into a rectangle in a deep cooking dish. I use a 13x9 baking pan, and lay across the top of it 4 slices of bacon and smear with a coating of more Ketchup,
bake at 350 for at least an hour some times a little longer.
WE love this, add or take away as you see fit, use more ketchup of you feel the meat mixture is a little dry, I was estimating some of the amounts because I am dumper kind of cook. I rarely measure but I have written this one down for friends so I hope you try it and like it.

Another of our favs is Pizza meatloaf, I use mozzerella cheese and spaghetti sauce to flavor and put pepperonis on top too. Good Stuff.

1 # ground beef
1 small onion
hand full of white clean mushrooms
1 large carrot
3-5 stalks of celery.

Use a processor to chop all the ingredients except the beef. Cook in a small skillet and let cool enough to touch.

Make 4 1/4 pound pattiess as thin as you can.

Stuff each pattie and fold it closed.
Cook the burgers fast and be ready to eat right away.

I use alot of stuffing but you can use less and use 2#s ground beef also. You can change the stuffing to suit you taste as log as you use vegetables and don't chop it to mush.

Stuffed Pizza Burgers

INGREDIENTS:
2 lb. lean ground beef
1 tsp. dried Italian seasonings
1/2 tsp. salt
1/8 tsp. pepper
1/3 cup chopped pepperoni
1/3 cup pizza sauce
2 Tbsp. grated Parmesan cheese
6 slices mozzarella cheese
6 kaiser buns
2 Tbsp. pizza sauce
PREPARATION:
Prepare and heat grill. Combine ground beef, Italian seasonings and salt in large bowl and mix gently. Form into 12 thin patties. Combine pepperoni, 1/3 cup pizza sauce, and Parmesan cheese in small bowl.

Divide among 6 patties within 1/2" of pattie edges. Top with remaining patties and press edges together to seal.
Grill patties 4-6" from medium coals for 10-15 minutes until meat is thoroughly cooked, turning once. Top each burger with a slice of cheese and remaining pizza sauce. Grill buns and let cheese melt for 1-2 minutes, then serve burgers in buns. 6 sandwiches

This is my recipe for Ghoulash, hope you like it. Its good and nutrious too!

1 lb. ground beef
1/2 onion, chopped
1/2 green pepper, chopped
sait and pepper
1 small can of tomato sauce
Velveeta Cheese
1 cup macaroni

In a skillet, brown beef with onions and peppers. In separate pot, cook macaroni until done. When macaroni is done, add to beef mixture, add tomato sauce, (you might need more) Then slice your velveeta and lay on top of mixture. Turn heat off, cover with lid and let cheese melt.

Tater tot casserole...1 lb hamburger, 1 bag tater tots, 1 can cream of mushroom soup, cheddar cheese, milk, salt , pepper, onion, and garlic...cook tater tots, brown ground beef and onion, mix all in casserole dish add enough milk just make it a little soupy, bake at 350 for about 45 minutes, add a little more cheese to top and bake until melted.

also...a pkg of Liptons onion soup mix...mixed with the ground beef adds alot of flavour to the burgers also*

1bl hambuger ,1/2 lbground pork, 1cup tomato juice,1 egg, 1 finely chopped onion, 1/2 finely chopped grenn pepper, bread crumbs,,salt pepper, garlic. mix form into loaf bake for 1 hour. best meat loaf.

cook them bad boys then Listen put 1000 insland dreesing on the top of the burger once you have all your onions,tomatoes,etc taste that bad boy you'll love them from here on out
