Philadelphia New York Cheesecake Squares
1 1/4 cup honey maid graham crumbs
1/4 cup butter melted
4 pkg cream cheese softened
1cup sugar
3 tbsp flour
1 tbsp vanilla
1 cup sour cream
4 eggs
1 can cherry pie filling
Preheat oven to 325 F. Line 13x9 inch baking pan with foil, with ends of foil extending over sides of pan. Mix graham crumbs and butter, press firmly onto bottom of prepared pan.
Beat cream cheese, sugar, flour and vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream , mix well. Add eggs, one at a time , mixing on low speed after each addition just until blended. Pour over crust
Bake 40-45 min or until centre is almost set. Cool completely. Refrigerate at least 4hrs or overnight. Remove cheesecake from pan using foil handles. Top with pie filling before serving. Store leftover cheesecake in fridge.
Makes 16 servings (one square each)
To bake this cheesecake in a 9inch square pan or 9 inch springorm pan, prepare batter as directed, using 3 eggs, reducing cream cheese to 3 pkgs. (250g each) and reduce sugar and sour cream to 3/4 cup each. (keep measures of all remaining ingredients the same . Pour over prepared crust. Bake and refrigerate as directed.

AlwaysOve 's New York Style Cheese cake is the same as mine and it is to die for. Plain is the best, but I make a raspberry sauce strained and a blueberry sauce with it, so people can choose the topping and just drizzle it over. But I do a different bottom,
I use 150g flour, 75g sugar, 1 egg, 1 tsp. baking powder and 50 g butter softened, mix it with a fork and then pat into springform pan bottom and half up the sides, bake in the oven for 15 min at 350 , put in the cheese mixtures and return and I bake it in the oven at 350 degrees for 30 minutes, turn the oven off and leave for 1 hour with door closed, then put under the broiler until small bubbles form and take it out and let cool in the fridge. Not as sweet as graham cracker crust.

This is my favorite.
JAY'S CHEESE PIE
1 1/3 c. fine graham cracker crumbs
1/4 c. melted butter
Mix very well and press into a 9-inch pie pan. Bake at 350 degrees for 5 minutes.
FILLING:
9 oz. cream cheese, at room temperature
2 eggs, beaten
1/2 c. sugar
1/2 tsp. vanilla
Cream the cheese very well and beat in the sugar. Add the eggs and vanilla and beat until very smooth. Pour into crust and bake at 325 degrees for 20 minutes, or until just set.
TOPPING:
1 c. sour cream
2 tbsp. sugar
1 tsp. vanilla
Mix together and spread carefully on the cream cheese filling. Return to 325 degree oven and bake 5 minutes.
Cool, then chill for several hours. Best if refrigerated at least 12 hours to develop flavor.

Chocolate Cheese cake is yummi and easy.
1 pack of cream cheese, at room temperature (it needs to be soft for mixing purposes).
1 tub of cool whip
1 bag of chocolate chips
1 pie crust
Melt bag of choc. chips in microwave in a big bowl. Add in tub of cool whip and softened cream cheese. once fully blended, put in pie crust. Chill in fridge for at least 2 hours before eating.

Key Lime Cheesecake

1 1/2 cups graham cracker crumbs,fine
2 Tbs sugar
1/4 cup butter, unsalted, melted & cooled
1 1/4 lbs cream cheese, softened
3/4 cup sugar
1 cup sour cream
3 Tbs flour, all-purpose
3 large eggs
1/2 cup Key lime juice (1/2-3/4)
1 tsp vanilla extract
1 drop green food coloring, optional
whipped cream, garnish
1 Make the crust: In a bowl stir together the crumbs, sugar and melted butter. Pat the mixture evenly onto the bottom and ½" up the sides of a butter 10" springform pan and bake the crust for 8 minutes. Transfer the pan to a rack and cool the crust.
2 In a bowl with an electric mixer beat together the cream cheese and the sugar until the mixture is smooth, beat in sour cream, flour, eggs (1 at a time and beating well after each one) lime juice vanilla and food coloring. Beat until smooth. Pour filling over crust. Bake the cheesecake in the middle of a preheated 375°F oven for 15 minutes, reduce the temperature to 250°F and bake the cheesecake for 50 to 55 minutes more, or until the center is barely set (the cheesecake will continue to set as it cools) Let cheesecake cool on a wire rack and chill it covered overnight.
3 Remove the cheesecake from the pan and transfer it to a cake stand and garnish with whipped cream.

Bittersweet Chocolate Truffle Cheesecake
1 1/3 cups chocolate wafer(cracker) crumbs
1/3 cup butter, melted
2 8 oz packages cream cheese , soft
1 cup sugar
3 eggs
1/4 cup Cold coffee or coffee liqueur*
8 Squares bittersweet chocolate, melted
1/2 cup sour cream
4 Squares bittersweet chocolate
1/2 cup whipping (heavy) cream
Preheat oven to 350 degrees F.
Crust: Combine the crumbs and butter and press the mixture onto the bottom of a 9 inch springform pan;refrigerate the crust while the filling is being prepared.
Filling: Beat the cream cheese with the sugar until blended and smooth. Beat in the eggs, one at a time; beat in the coffee (or liqueur), then the melted chocolate; blend in the sour cream. Pour the filling over the prepared crust, smoothing the top. Bake the cheesecake for 40 to 50 minutes or just until the center is barely set; cool it on a wire rack, then in the refrigerator overnight. Run a sharp knife around the cheesecake to loosen it from the rim; remove the rim.
Glaze: Save a few curls from the back of one of the squares of chocolate; reserve them for the garnish. Bring the whipping cream to a simmer over low heat; add the remaining chocolate and stir the mixture until smooth. Spoon the glaze over the prepared cheesecake and garnish it with the reserved curls.

This cake is easy to make, and it's so delicious. Everyone that's tried it has said it tasted just like the ones in a deli! You'll love it!

15 graham crackers, crushed
2 Tbs butter, melted
4 (8 ounce) packages cream cheese
1 1/2 cups white sugar 3/4 cup milk
4 eggs
1 cup sour cream
1 Tbs vanilla extract
1/4 cup all-purpose flour
1 Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
2 In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
3 In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4 Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.
Preparation time: 30 minutes
Cooking time: 1 hour
Ready in: 7 hours and 30 minutes
