"Chop suey" literally means 'mixed pieces', and is usually a stir-fried mixture of small pieces of various meats and vegetables.

There is some debate over this, but it is most likely an "American" invention, first made by Chinese immigrants in New York. Some people contend it was invented in China, but that would not explain why people there apparently call it "American Chop Suey" (though of course they say that in Mandarin or Cantonese!)

Chop Suey is a purely American invention the same thing with fortune cookies. Chop Suey is actually a combination of different things left over in a kitchen like I said it's an American invention.
