GRILLED-CHICKEN CAESAR SALAD
This version of the classic salad shows why it is a favorite across America.
1 1/2 lb skinless boneless chicken breast halves
1/2 cup olive oil
1 teaspoon salt
3/4 teaspoon black pepper
2 garlic cloves, smashed
3 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon anchovy paste (optional)
2 (10-oz) packages hearts of romaine
1/2 cup grated Parmigiano-Reggiano
1 1/2 cups plain or flavored croutons

Special equipment: a well-seasoned large (2-burner) ridged grill pan



Heat lightly oiled grill pan over moderately high heat until hot but not smoking. Meanwhile, pat chicken dry and coat with 1 tablespoon oil, then sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Grill chicken, turning over once, until just cooked through, 14 to 16 minutes total.

While chicken grills, blend garlic, lemon juice, mustard, anchovy paste, and remaining 1/2 teaspoon salt and 1/2 teaspoon pepper in a blender until combined. With motor running, add remaining 7 tablespoons oil in a slow stream, blending until emulsified.

Transfer chicken to a cutting board and cut into 1/2-inch-thick slices. Toss chicken with 2 tablespoons dressing in a large bowl. Add romaine, cheese, remaining dressing, and croutons and toss.

Makes 4 servings.

Chicken Caesar Salad

Ingredients

(7 servings)

4 1 oz. slices French bread
Vegetable cooking spray
1/2 ts Garlic powder
2 lb Boneless chicken breasts
1/3 c Fresh lemon juice
1/4 c Red wine vinegar
1 tb Olive oil
1 ts Anchovy paste
1/4 ts Fresh ground pepper
5 cl Garlic
9 c Romaine lettuce
1/4 c Grated parmesan cheese


Instructions

1. Trim bread crusts and discard.Cut bread into 1 inch cubes. Place cubes in a single layer on a baking sheet. Coat cubes with cooking spray; sprinkle with garlic powder; toss well. Bake at 350F for 15 minutes or until lightly browned and set aside.
2. Coat a large nonstick skillet with cooking spray; place over med- high heat until hot. Add chicken halves; saute 6 minutes on each side or until well done. Remove chicken from skillet; let cool. Cut chicken across the grain into thin slices; set aside.
3. Combine lemon juice and next 5 ingredients in container of an electric blender. Cover and process until smooth. Add 1/4 cup of the lemon juice mixture to the chicken; toss gently to coat.
4. In a large salad bowl, place the lettuce. Drizzle remaining lemon juice mixture over lettuce and toss well. Add the chicken mixture and cheese, and toss gently to coat. Serve with croutons.

I use the Caesar mix in the bag, I make chicken breast by seasoning them on a griddle with lemon pepper and I only use Cardini's brand of Caesar dressing. I sprinkle on grated parm that I buy in the dairy aisle with the cheese. That makes a perfect chix caesar salad. And it is easy to boot.

Makes 2 servings.

1/2 garlic clove
2 tbsp. plus 2 tsp. lemon juice
1 tbsp. plus 1 tsp. mayonnaise
2 tsp. grated Parmesan cheese
8 oz. skinned and boned cooked chicken, chilled and diced
1/2 c. diced chilled celery
2 tbsp. diced drained canned pimientos
2 tbsp. chopped scallion (green onion)
4 pitted black olives, sliced
1/8 tsp. each salt and pepper
4 chilled iceberg or romaine lettuce leaves

Rub a medium wooden bowl with cut side of garlic clove and discard garlic; add lemon juice, mayonnaise, and cheese to bowl and stir to combine. Add remaining ingredients except lettuce and mix well; line serving platter with lettuce and top with chicken mixture.

1/8 teaspoon dried oregano
1/4 teaspoon garlic salt

4 cups torn romaine
1 small tomato, thinly sliced
Caesar salad dressing
Caesar salad croutons

What to Do
1. Brush chicken with oil. Combine the basil, oregano, garlic salt, pepper, and paprika, and sprinkle over chicken.

2. Grill, uncovered, over medium-low heat for 12-15 minutes or until juices run clear, turning several times.

3. Arrange romaine and tomato on plates. Cut chicken into strips; place on top. Drizzle with dressing. Sprinkle with croutons.
