I'm going to cook dinner for him this weekend, and I need some suggestions...

Here's a 3 course meal:
1) Mixed greens salad with goat cheese/macadamia nut croutons with raspberry balsamic vinagrette (get a small roll of goat cheese, cut it into small discs and coat with chopped macadamia nuts---to make vinagrette..puree in a blender 3 parts balsamic vinagrette, 1 part olive oil, some raspberries, sugar, salt & pepper to taste, a pinch of dried thyme)

2) Killer Shrimp with French Bread (this dish is surprisingly simple and delicious)

KILLER SHRIMP
2 tbsps fresh or dried rosemary
2 tsps thyme
1 tsp black pepper
2 cloves garlic, peeled and chopped
1/2 tsp fennel seed
1 tsp celery seed
1 tsp crushed red pepper
2 qts clam broth** (if making with chicken, use chicken broth)
3 ozs tomato paste
1 stick butter
shrimp
french bread
Using a mortar and pestle, partially grind the rosemary, thyme, and fennel seed. Break the spices up rather than grinding them. In the end there should still be recognizable pieces of the rosemary, etc.
Mix the ingredients in a pot.
Simmer for an hour or two.
Just before serving, add raw shrimp.
Simmer until shrimp is done, stirring, about 2 minutes.
Serve in bowls.
Each bowl should contain a serving of shrimp and a lot of broth. The broth should almost completely cover the shrimp. Use unpeeled shrimp. The dish is eaten with your fingers. Dig out a piece of shrimp and peel it. Eat it. Soak up the broth with the bread and eat that. No utensils.This recipe makes a lot of broth.
**If you have the time, peel the shrimp down to the last joint, leaving that and the tail intact. Add the shells to the clam broth and bring to a boil, then cover and simmer at least 1/2 hour. Pour into blender in batches and process till smooth. Strain back into pot. Add herbs and remaining ingredients and proceed with the recipe.

3) Strawberries dipped in chocolate

4) Champagne

"Pasta Rosa-Verde"

A GREAT 30-minute meal!

8 oz dried ziti or mostaccioli pasta
1 med. onion, thinly sliced
2 cloves garlic, minced
1 T olive oil
4-6 med tomatoes, seeded & coarsely chopped
1 t. salt
½ t. black pepper
¼ t. crushed red pepper
3 c. spinach, coarsely chopped
¼ c. pine nuts, toasted
2 T. gorgonzola or other blue cheese

Cook pasta & Drain. Cover & keep warm.

While pasta cooks… In large skillet, cook onion and garlic in hot olive oil over medium heat until onion is tender but not browned.

Add tomatoes, salt, black pepper and if desired, red pepper. Cook & stir over medium-high heat about 2 minutes or until tomatoes are warm and release some of their juices.

Stir in spinach and heat just until greens are wilted.

To serve, divide pasta into individual pasta bowls. Top with tomato mixture and sprinkle with toasted pine nuts & gorgonzola (or other blue) cheese.

Add some crusty Chicago style rolls or garlic bread and you have an impressive meal.

Even faster:

"Quick Sherried Chicken"
6 mid. Chick breasts boneless, skinless
1 can cream of mushroom soup
1-1/3 c. sour cream
½ c. cooking sherry

Place chicken in greased baking dish. Combine remaining ingredients and pour over chicken. Bake 1 hour @ 350 degrees.

Serve with:

"Dirty Rice"
1 c. uncooked rice
1 stick butter, melted
1. can onion soup
1 can beef bouillon

Mix all ingredients, Cover & bake for 1 hour @ 350 degrees,

Chicken Alfredo. I buy the jar of Classico garlic alfredo sauce. I by the chicken breast tenders and alfredo pasta. Cook pasta according to package directions. Dice & sautee chicken with garlic & 2 tbsp olive oil until done. Then add sauce & simmer uncovered about 10 min. Pour over noodles. Serve w/ warm garlic bread, ceasar salad & white wine.

Spaghetti...nothing could be easier and he'll love it!

1. Buy one jar of Ragu spaghetti sauce, any flavor you choose. Heat it to a simmer.
2. Add 3 Sweet Italian sausages, bring it back up to a slow simmer, place a lid on it, and simmer for 20 minutes.

Spaghetti.
Cook 1/3 of a package of angel hair spaghetti according to directions, drain it, put about a tablespoon of oil on it to keep from sticking together.
Place sauce and spaghetti in separate bowls.

Simply serve it with a green salad, and a loaf of heated garlic bread.

Quick health and impressive is a hard one.

I would brown pork chops in a frying pan with no oil. Place in baking dish and bake about 2 hours on 250.

Meat loaf, mashed taters and green beans and cornbread
meatloaf-
1 lb. ground beef
s and p
1/2 c. bread crumbs
1/4 c. catsup
1/3 c. Worchestire
egg
mix all and spread in bread or meatloaf pan- spread some more catsup and worchestire on top - bake 350 for 45 min to an hour till done
Mashed taters--
cook 7-8 small taters in pot boil till done
mash with butter , milk and sour cream. add grated cheddar cheese or ranch dressing instead of sour cream for flavor. Cook up green beans or his favorite veggie as side.
I like JIFFY cornbread Johnny Recipe (on box).. It's easy and SUPER good!
Good luck..
For dessert do Apple Crisp
4-5 apples peeled- cinnamon to taste, 1/2 c. sugar.. butter , nutmeg to tastedobbed on apples.My mom likes 1/2 c. oatmeal but it's up to you. top with vanilla ice-cream --serve warm

A lasagne is so easy to do.
Some Mince, some dried layered pasta, jar of pasta sauce and a jar of white sauce and finally top off with some cheese.

For the healthy option substitute the meat with quorn veggie mince meat substitute, or simply add your favourite veggies in with the mince and sauce.

Examples are carrots, peas, cauliflower etc...

BAKED PENNE WITH BROCCOLI AND THREE CHEESES

2 teaspoons olive oil
3 garlic cloves, minced
2 cups penne pasta
3 cups 1-inch broccoli florets
2 cups purchased marinara sauce
1 cup (packed) coarsely grated low-fat mozzarella cheese
1/2 cup low-fat ricotta cheese
1/2 cup chopped fresh basil
2 tablespoons grated Parmesan cheese

Stir oil and garlic in small skillet over medium heat 1 minute; set aside. Cook penne in large pot of boiling salted water until almost tender, about 11 minutes. Add broccoli; cook 1 minute. Drain.
Mix marinara, 1/2 cup mozzarella, ricotta, basil, 1 tablespoon Parmesan, and sautéed garlic in large bowl. Add pasta and broccoli; toss. Season with salt and pepper. Transfer to 11x7x2-inch glass baking dish. Sprinkle remaining mozzarella and Parmesan over.

Preheat oven to 400°F. Bake pasta uncovered until cheese melts, about 20 minutes. Let stand 5 minutes.

Serve with a salad!

I made this 2 nights ago, it was really really easy and good. My husband loved it!

*PARMEASAN CRUSTED CHICKEN*

2 cups MINUTE Brown Rice, uncooked
1 can (14 oz.) fat-free reduced-sodium chicken broth, divided
6 RITZ Crackers, finely crushed
2 Tbsp. KRAFT 100% Grated Parmesan Cheese
4 small boneless skinless chicken breast halves (1 lb.)
2 tsp. oil
1/3 cup PHILADELPHIA Chive & Onion Light Cream Cheese Spread
3/4 lb. asparagus spears, trimmed, steamed



COOK rice as directed on package, using 1-1/4 cups of the broth and 1/2 cup water.
MEANWHILE, mix cracker crumbs and Parmesan cheese on plate. Rinse chicken with cold water; gently shake off excess water. Dip chicken in crumb mixture, turning over to evenly coat both sides of each chicken breast with the crumb mixture.
HEAT oil in large nonstick skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until golden brown on both sides and cooked through (170°F). Place chicken on serving plate; cover to keep warm. Add remaining 1/2 cup broth and the cream cheese spread to same skillet. Cook on medium heat until mixture just comes to boil, stirring constantly. Simmer 3 min. or until sauce is thickened, stirring frequently. Spoon sauce over chicken. Serve with the rice and asparagus.

Stir fry some mushrooms onions and peppers together and make hamburger patties and fry them. Melt cheese over the top andthen serve all together with the veggies and meat. salad on the side.
