Sushi grade is not only the freshest fish but it is also the way it is cut to sell. I have never seen sushi grade fish at Walmart but I know at my local butcher shop he will keep some sushi grade tuna on hand. Talk to the butcher at you Walmart. Do you have a good sushi restaurant where you live? I tried making sushi but it is alot of work & very expensive. Also the way they prepare their sushi rice takes 48 hours. I never could get it right. I gave up & decided to leave the sushi to the masters. Good luck to you.

yeah!!! not a good idea you can't make fish to be sushi grade it doesn't work like that you need to go to a fish market that catches their own and get tuna it's the best and safest to do in your own home i also live by a coast well a gulf but i am way closer (like a few blocks) and our wal-mart does not sell fresh fish neither does yours ask them some time they defrost the fish there and get it frozen and i tis ususlly the little packages next to the display case,you can get seriously ill eating good sushi so becareful...

When a fish is caught in a net and instantly chilled to keep it fresh, the fish dies quickly, but the nasty stuff in its gut (bacteria, parasites, etc) immediately start to burrow their way out through the fishes flesh. These things are (usually) rendered harmless by even the most cursory 'cooking', but can make you ill if eaten raw. So "sushi-grade" fish is generally gutted on the boat, then chilled, making it safe for raw consumption.
Eat only fish labelled as "sushi-grade" if you wish to eat it raw.

It's not a matter of "what to do with it to make it sushi-grade." Sushi grade fish is made that was from the minute it is caught to packaged to prepared. Sushi-grade is not a cooking process. It comes from fish that you whole-heartedly trust, and that really should be from a reputable supplier, not a chain superstore.
Maybe it's just me, but I have issues buying food for raw consumption from the same place that you can get discounted electronics and underwear...

Since you live near the coast, I suggest that you purchase your fish from a local fish house. By the way the fish at your wall mart is the same as the wall mart in Tenn.

It has to be labled "Sushi grade" and very fresh. Most fish in supermarkets are not so fresh. I can't imagine Walmart having sushi grade fish.

yes buy fresh fish from the local port and then take it home for sushi also if it smells of fish then its not fresh enough and thats serious also the gills should be still deep red and not light pink
