Anyone want to share a good recipe (not a cut and paste from a website!) I've never made fried rice successfully, but we love it at Chinese restaurants. Thanks!

You've come to the right place - because I don't know how to cut and paste!
Here's what I have...


"Oriental Fried Rice" - 4 to 6 servings

3 cups cold cooked rice
1/4 tsp. salt
1/4 cup slivered roast pork or chicken
1/2 cup finely chopped celery
1/3 cup sliced green onions (scallions); including tops
1/2 cup drained bean sprouts
1 egg; beaten
2 tbsp. soy sauce
Dash ground black pepper

Heat rice and salt in well-greased skillet; add meat, vegetables and egg. Cook, stirring, for 3 minutes over high heat. Add a little shortening if rice tends to stick. Add soy sauce and pepper; cook and stir 1 minute longer.

My mom always made this when i was a kid
bake the chicken in a baking dish with garlic powder, onion poweder, salt, pepper, paprkia (works best with chicken breast on the bone with skin)
when done baking remove chicken from the pan and add the white rice to the baking dish
mix is all around picking up the bits at the bottom, give it a shot of soy sauce
throw it back in the oven to heat the rice through
done

This is my favorite casserole ever!

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Cheesy Chicken & Rice Casserole
Prep Time: 5 minutes
Bake Time: 45 minutes

Serves: 6



Ingredients:


1 can (10 3/4 oz.) condensed cream of chicken soup
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
2 cups fresh or frozen vegetables
1/2 tsp. onion powder
4 skinless, boneless chicken breast halves
1/2 cup shredded Cheddar cheese



Directions:



1. Stir the soup, water, rice, vegetables and onion powder in a 12 x 8” shallow baking dish.

2. Top with chicken. Season chicken as desired. Cover.

3. Bake at 375°F. for 45 min. or until done. Top with cheese.

TIP: Italian: In place of onion powder, use 1 tsp. Italian seasoning. Substitute 1/3 cup shredded Parmesan for Cheddar.

Mexican: In place of onion powder, use 1 tsp. chili powder. Substitute Mexican cheese blend for Cheddar.

No Recipe Fried Rice

Saute some sliced green onions or finely chopped regular onion in a small amount of oil( reg. veg. oil is fine) until they are slightly limp. Add salt and pepper to taste, stir in cold rice ( being sure it is crumbly and not clumped together). Once the rice is heated add a scrambled egg or two if using a lot of rice. Stir quickly when adding the egg so it coats the rice rather than having scrambled eggs. Cook until egg is done. You may add peas , bits of ham or chicken if you would like.

Easy! Throw in some Campbell's Cream of Chicken soup, mix all three together and put into a greased casserole pan. Top with crushed Ritz Crackers or Potato Chips. Bake at 350 for about 30 minutes. Yummers!

add some frozen peas,bacon bits,and chopped onion to the chicken and rice,throw it in a wok or skillet with a cup of chicken stock, a tbsp of soy sauce,and a 1/4 cup of brown sugar....keep stirring and moving it around....in 10 to 15 min, it'll taste just like authentic fried rice from your favorite chinese restaurant! If you want to spice it up, add a crushed clove of garlic and some dried red pepper flakes.! Yum-o!

mix the rice with 1 can of cream of chicken soup, 2 cups of frozen peas, and 2 cups shrd. cheddar & mont. jack cheese. add 1/2 cup of milk and mix together. place in a greased 9x13 pan, place chicken breasts on top. cover with foil and bake at 350 until chicken is cooked through.

this is my personal recipe for cheesy chicken and rice bake. I have made it before according to different recipies, but it always needed a little tweaking, so this is what I have.

you can sub. frozen broccoli for peas
if you like, add a small can of mushrooms, drained.
to speed it up, you can dice the chicken up and mix in with the rest before you put it in the pan. it will cook faster.
add more or less cheese to your liking.
add onion if you like
I usually use 1 to 1 1/2 cups already cooked rice. if you like it creamier, add more milk or cream of chicken soup.

I was looking for a way to use some leftover stuff and this is wat it became.

Take the chicken chop it up,take the rice,garlic powder,salt,1 cup brocolli,1 can cream of cheddar soup,Now mix all and spread mixture into a casserole and bake.Then sprinkle cheddar cheese on that.Bake @ 350 for 45 minutes.....Supper is ready....

4 cups cold cooked rice
8 ounces cooked chicken chopped
2 eggs
1/2 cup green peas
1 medium onion, diced
1 green onion, diced
Seasonings (add according to taste):
Light Soy Sauce
Oyster sauce
Salt
Pepper
Oil for stir-frying, as needed

Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired).
Chop the chicken meat and dice the onion and green onion.
Heat wok and add oil.
When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half the same way. Cut the egg into thin strips, and save for later.
