Don't use a fork to turn the steak. You want to keep the juices in.
Use a spatula or tongs to turn the steak.
I know it sounds like the heat is too high, but it sears the steak to keep in the juiciness.

Best bet, sear the outside in a hot pan w/ olive oil or butter or both. After searing place in an oven at 350 F for 15 to 20 min to finish (depending on weight cooked). Remove from oven and cover for 10 min to rest, then serve.
Searing will take about 5 min per side on high heat, this will lock in the juices. Finishing in the oven will keep you from overcooking. Resting allows the juices that are wanting to run from the meat onto the cutting board to migrate back into the steak.

Steak Stir-Fry
Ingredients
cup plus 5 tbs.Lite soy sauce, plus more for serving
1-1/2 tbs.Cornstarch
1-1/2 tbs.Dry sherry or Chinese rice wine (optional)

Preparation
Combine first 4 ingredients in a jar with a tight-fitting lid. Shake vigorously. Place sliced beef in a mixing bowl. Pour soy sauce mixture over beef and toss to coat. Heat peanut oil and sesame oil in a wok or heavy nonstick skillet over high heat. Stir-fry ginger and garlic 45 seconds. Add meat and marinade and stir-fry 2 minutes or until beef begins to brown. Add scallions and mushrooms and stir-fry 2 minutes or until scallions are softened. Add spinach and stir-fry another 45 seconds. Season with pepper to taste. Serve with additional soy sauce.

If it's a steak, then depends on how thick they are, but if it's one around 1 inch thick, this is the way I like it:
Marinate it with half a lime, 1 clove of garlic (chopped), salt and pepper and half a cup of beer with 2 tspn of olive oil for 1 hour.
In the grill in medium heat, place the steak for 5 minutes in one side and then turn it and leave it for another 2 minutes, this for a medium rare, for medium, then add 2 more minutes on each side.

When I do steaks under the broiler in the oven, I like to put a dry rub like McCormick's Grill Mates Pork Rub (doesn't matter) all over the steak, and then about 2 to 3 inches below the broiler place your steak(s) on a broiler pan or aluminum foil and broil according to the thickness of your steak and how you like it done. i think the best way to cook steaks, i'm not sure about sirloin, but steaks in general is to have them be cooked every way you can in one, well on outside and medium, then rare in the center.... all u have to do is cook 2 min on one side and two min on the other, slice to see the inside and brown to pink to bloody...

i like to marinade first, at least a couple hours
u can buy a marinade or u can just put ur favorite spices and a couple tbs of water.
then with any steak its high heat, let the pan get really hot, add butter, sear each side a couple minutes then turn the heat down and cook to ur liking ( medium, well done, etc)

You put it under the broiler in your oven and then turn it to the other side. The length of time will depend on how thick it is and how well done you like it.
Another way is to fry it in a pan with a little butter. Again you must turn it over until it is how you like it.
