For the three hundred years before Emporer Constantine created the original Bible and started the icon called Christ and the religion called Christianity and the multitude or religious orders since. I have come to find many truths in the dead sea schrolls and other places about this wonderful and courageous man named Jesus but is there a book any are aware of that talks about or describes how those who followed the example set by Jesus lived?

Probably not, but it'd be a nice subject for a book!

christians went into hiding shortly after jesus was crucified or they all would have ended up like the apostles. likewise, they had to hide a lot of the writings of his followers.

without a printing press or a lot of peoplewho could read and write, the writings were lost. even with the councils held by constantine, they decided on what was holy writing and what was not and got rid of the rest. with that period of hiding and the loss of the credibility of "lesser scriptures" they weren't transferred to fresh papyrus as often and eventually were lost. the bible itself even refers to other writings that aren't anywhere to be found.

chances are, you'll never find any.

If you like historic books, read "Church History" by Eusebius of Caesarea. He lived from 263 to 339 and was a great historian. His book describes precisely the time from Christ's Ascention to Constantine.

read the gospels and the rest of the new testament. Our oldest gospels date to 120 a.d which predate constantine by about 200 years. (the dead sea scrolls date to 100-200 b.c.) Constantine and hundreds of bishops debated on Christian faith, yet the 4 gospels were immediately accepted by the early church hundreds of years earlier.

you will find most of which you inquire in the Holy Bible.
the disciples traveled to many countries and were know to teach in many countries. i would first check with one of the many seminarys located all across the us and you will find many have classes and books on each one. some even have online librarys with tons of stuff. even the library of congress which holds more books in different languages than some countries have themselfs.
