Yes, it actually does go off.

The blue veining - a healthy form of bacterial spores - is actually introduced into the cheese product to produce its distinctive flavor and aroma (Stilton, danish blue, gorgonzola, etc). That blue veining is a bit different, although usually a member of the same family, of the fuzzy mold that grows on other types of cheese that have been hanging around in the fridge too long.

If you have not opened the package of blue cheese (thus not ruptured the airtight seal), you can probably use it for up to two weeks past the use by date. Take a good sniff, though, and look for the fuzzy mold that isn't part of the blue veining. You'll be able to tell if it's still usable before you take a bite.

Yes. When there is a dark ring round the edge of the cheese this means the cheese is too old and can be quite bitter, so it is best to eat it before the date on the pack.

If your blue cheese is a hard type (Gorgonzola and whatnot), usually you can chop off the outside moldy layer and eat the inside, untouched cheese. Just make sure you're not just skimming off the outside; hack off a good 1/4 inch or so. Also works with cheddar...

Always thought that it couldn`t really go `off`.. but it can and does - had some the other day which was a few days outta date... YUK !!!!!!!!!!! such an awful sour taste :(

i always find its gets much better after its use by date as the maturity is in the taste! its been sitting on a shelf for years maturing who decides what day its bad for you! lol

probably, stilton does have mould in it.
