"Apocalypsis" means "revelation". "Apocalypto" may mean "I reveal myself" literally. Is maybe Mel Gibson telling us he is revealing his deep thought? The epigraph by Will Durant would be an indication.

When they interviewed him...I saw it on some special, probably History or Discovery Channel...about the movie he stated the literal meaning was "new beginning". I am not sure if that is true or not because Mel Gibson is cute and all but I do not consider him an expert on linguistics.

I think he chose it because its a good story, a good epic that was challenging and that is the kind he tends to pick. It is possible he has personal reasons related to his beliefs but I have no way of knowing.

I will ask around school and see if someone knows about the exact meaning of apocalypto...I would have thought it would be closer to Apocalypse...

This is a wild guess, but the Apocalypse is always characterized as a end to the world... in the movie it seemed that the time was roughly around the Mayan empire. It is known in the Mayan empire that an apocalypse would occur and the world would end. Shortly thereafter the entire Mayan race disappeared (Probably due to eastern colonization as shown at the end of the movie). So I'm guessing that as the ships came they ended the Mayan empire and sort of caused a Mayan "Apocalypse" if you will.
