The countries where we do not have any missionaries:

Middle East countries
All African countries except for Kenya, Nigeria, Ghana, Uganda, Ethiopia, and South Africa (we do have missions in those countries).
Mainland China, Cuba, North Korea

We do have humanitarian couple missionaries in some of those countries, but we don't have proselyting missionaries.

Countries where we don't have North American missionaries (meaning US and Canadian):

Haiti
Philippines Davao Mission
Philippines Cagayan De Oro Mission

Countries where we can't send Canadians, but we can send US Missionaries:

Austria, Bulgaria, Slovakia, Chezh Rep, Denmark, Fiji, Poland, Portugal, Norway, Madagascar and Germany Munich/Austria Mission

Good question. I have two answers, neither of which actually answer your question, but I thought I'd throw it in.
One, I've recently heard that they are calling three missionaries (one from near where I live) that will open China. This is so cool!
They will be out for 3 years - as is normal for opening a country.
Two, my Gospel Doctrine teacher mentioned a theory he heard concerning the spreading of the gospel to every nation. He said that it may well be that it's talking about how the gospel must be spread to every nation, kindred, tongue and people over the existance of the earth, and not just in these latter days. If this is the case, he says, then areas of the world like Saudi Arabia, Iraq, Iran, etc which do not currently allow the gospel, but have in the distant past, won't - even in the latter days because they already have. I don't know if that makes sense, but hearing him say it, I could see where that may be the case - even though I'm not sure that's the way it will be.

I would think missionaries wouldn't be allowed to enter any communist country, or Islamic country, but other than that everything else is ok. The gospel is making a lot of headway in former eastern bloc countries, and as I said even China is opening up.

There are missions in all the places listed here:
http://www.ldsmissions.net/
Any country not on that list, missionaries are not sent to.
Iraq and Iran were two that I tried that weren't there. Also, some small countries may be included in some of these missions... Sorry I couldn't be more specific where they can't go, but I couldn't find a reliable site to tell me...

And actually to Terra_... I have a man in my ward who went to Malaysia on his mission, and they are allowed to preach to muslims with the Mission President's permission.

Not 100% sure, but I think it's just a handful of countries in the Middle East at this point. I think only humanitarian work is allowed in China also...but that may have changed during the past couple of years.

Off the top of my head? China (except for Hong Kong), and most of the middle eastern countries.

Also there are some countries which will allow missionaries in, but they are too war-torn or dangerous at the moment to safely send them in.

They go in the front door, or they don't go. They do not go into countries that prohibit missionary work. This includes Communist China, N. Korea and Cuba. They do not go into most Arab countries because converts would be harmed. They do not go into Israel as missionaries. They stay out of areas of armed conflict such as Sudan or Somalia.

I don't know all the countries they can't go in. I do know however that they CAN go to malaysia, they just cannot preach to muslims in Malaysia (even though it is an islamic country, there are a percentage of the people there who are exempted from that rule) If you DO preach or get accused of preaching to a muslim on accident, you get thrown in jail.

probably the same countries that don't accept much of anyone preaching a different religion: Muslim countries, Nepal and India have also some very strict regulations on outsiders regarding religion, as does China
