You start by using a really good brand of tuna which will cost more. I use albacore myself, it is a superior tuna.

I worked at subway about 12 years ago. The recipe was really simple, open a can of tuna, drain the tuna, add mayo until the correct consistency. Oh yeah, and we squeezed the tuna dry by hand otherwise it would get really watery by the next day. Maybe it was the latex gloves we used so we didnt always smell like tuna.

The "sub"way tuna hoagie

2 12 oz cans chunk light tuna in water
1/3 cup mayonnaise
2 tsp lemon juice
1/4 tsp salt

Mix all ingredients in a bowl and stir to break up chunks of tuna. Chill till it gets really cold. Subway usually puts two "scoops" of tuna on a 6" sub. Add whatever other subway veggies you like on yours. This makes enough for three 6" subs.

I read that Subway's tuna sub is the worst for you nutritionally, out of any of the subs they sell.

At home I mix one can of albacore tuna with one of chunk lite tuna in water. add about 1/3 cup of really finely cut up white onion, 1/3 cup of finely cut up celery, a dash of pepper and then half and half of Mayo and Miracle Whip. Add as much of that as you personally like.

Then put it on toasted white bread with crisp iceburg lettuce (I know dark leafy greens are better for you but iceburg is SO darn good on a tuna sand) then after you put the lettuce on the bread, put on the tuna, and put a layer of potato chips.

Serve with a side of chips. Mmm.

It's the dolphin in the tuna that gives it that special Subway taste.
