HUMMUS
1/4 cup water
1 cup chick peas
3/4 tsp garlic (I love garlic so I normally add a bit extra)
2 tbsp lemon juice
4 tsp olive oil
1/4 cup tahini (if you are in a pinch you can use peanut butter)
1 tbsp parsley
1/4 tsp salt
Blend together in a food processor.
Taste. Add seasoning to your taste.
Serve with pita, naan, veggies.
Use as a great spread on sandwiches.

HUMMUS
(Chick-Pea Dip with Parsley and Pine Nuts)
4 garlic cloves
1 teaspoon salt
two 1-pound 3-ounce cans chick-peas, drained and rinsed
2/3 cup well stirred tahini
1/4 cup fresh lemon juice, or to taste
1/2 cup olive oil, or to taste
1/4 cup fresh parsley leaves
2 tablespoons pine nuts, toasted lightly
Accompaniment: Toasted Pita Thins
On a cutting board mince and mash the garlic to a paste with the salt. In a food processor purée the chick-peas with the garlic paste, the tahini, the lemon juice, 1/4 cup of the oil, and 1/2 cup water, scraping down the sides, until the hummus is smooth and add salt to taste. Add water, if necessary, to thin the hummus to the desired consistency and transfer the hummus to a bowl. In the food processor, cleaned, purée the remaining 1/4 cup oil with the parsley until the oil is bright green and the parsley is minced transfer the parsley oil to a small jar. The hummus and the parsley oil may be made 3 days in advance and kept covered and chilled. Divide the hummus between shallow serving dishes and smooth the tops. Drizzle the hummus with the parsley oil and sprinkle it with the pine nuts. Serve the hummus with the pita.
Makes about 4 cups.

We make Hummus in our house at least once a month. Take 1 can of chickpeas, rinse.
Put the chickpeas in the food processor
add 2 cloves of garlic
add 3 heaping tablespoons of Tahini
juice of 2 lemons
Start blending, as the food processor is mixing, slowly add in about a quarter cup of vegetable oil, with a splash of olive oil
add salt to taste and a pinch of cumin.
thin out with water (approximately a 1/4 cup)
refrigerate.

2 cloves garlic—roughly chopped

14 oz (400g) canned chickpeas (garbanzo beans)—rinsed and drained
½ cup tahini
1 teaspoon sea salt
PLACE all ingredients in a food processor or blender and process until smooth, scraping the sides occasionally.
Variations: If you like a spicier hummus, add a small red chili (chopped) or a pinch of cayenne pepper, or try a little cumin for a more exotic variation.
Tip: Prepare extra quantities of hummus—it can be refrigerated, covered, for up to 1 week and frozen for up to 3 months.

Spicy Hummus

2 tablespoons chopped onion
1 garlic clove, peeled
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
2 tablespoons sesame seeds, ground
2 tablespoons cider vinegar
2 teaspoons soy sauce
2 teaspoons lime juice
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon each ground cumin, ginger, coriander and paprika
Pita bread, cut into wedges
In a food processor or blender, combine the parsley, onion and garlic; cover and process until smooth. Add the chickpeas, sesame seeds, vinegar, soy sauce, lime juice, honey, mustard and seasonings; cover and process until smooth. Serve with pita bread. Yield: 1-1/2 cups.

we don't use measurements so the ingrediants are:
garbanzo beans-drained, tahini, garlic, cumin, good olive oil, salt pepper.
in a food processor.....process beans til smooth, add tahini one tablespoon at a time, a few garlic sections pressed, seasoning to taste....let it sit and taste again before serving with pita bread.
