avacado lime soup
2 Cups Onion, finely chopped
2 Cups Celery, finely chopped
1 1/3 Cups Leek (white only), finely chopped
1 Tbsp Garlic, finely chopped
6 oz Unsalted butter
1 ½ Cups Flour
12 Pints Chicken stock
6 Pounds California Avocados, pureed
¾ Cup Fresh lime juice
½ Cup Cilantro, chopped
Salt and freshly ground white pepper - to taste
Creme fraiche or sour cream - as needed for garnish
Roasted pimiento or red bell pepper, julienned - as needed for garnish

Instructions

METHOD
Sauté onion, celery, leek and garlic in butter until translucent, about 5 minutes.
Stir in flour; cook over low heat, stirring constantly 3 or 4 minutes.
Whisk in stock; simmer until vegetables are very soft, about 20 minutes.
Stir in avocado; simmer 10 minutes.
Stir in lime juice, cilantro, salt and pepper.
PER ORDER
To serve chilled or hot, garnish 1-1/2 cup soup with a dollop of crème fraiche and a few strips of pimiento.

Veggie Delight -- a slice of mild cheese (jack, Meunster, swiss), avocado slices, alfalfa sprouts, sliced cucumber, and tomato.


Rich and creamy avocado makes mayonnaise unnecessary in many sandwiches. Place thin slices of ripe avocado on bread or toast surfaces and slightly mash and spread instead of using butter or mayonnaise before layering on other ingredients.


A firm slice of wheat or sourdough bread with avocado slices, salt and pepper makes a delicious snack. Cut into quarters and garnish each with a cucumber or radish slice and a sprig of parsley or cilantro for party finger-food.

I also love avocado. I'll eat it right out of the peel with a little sprinkle of salt and or lemon/lime juice. I'll put slices of it on burgers, sandwiches, salads or just have plain old guacamole dip. That stuff is goood eating!!!

I LOVE IT! I slice up avocado and make a B.L.A.S.T = Bacon, Lettuce, Avocado, Sprouts and Tomato sandwich. So Yummy! I also put in on my salads!

Yes! I can't believe there was a time when I didn't like them. I thought they were gross. One day I tried it on a turkey sandwich and I've been hooked ever since. I love them so much, I eat them cut in half, pitted, and scooped out with a spoon. A little lime or lemon juice every once in while.

I love avocado ever since my grandmother intoduced me to it at a fuddruckers when I was about 10 years old. I had a bite of her avocado and bean sprout burger and it was awesome and now continue to put it on burgers and other sandwhiches, i make guacomole, i put it in salads, and more. i love avo, i love avo, i love avocado.

I love it.
If you put some good salt on it, it flavors better.
Try to make california roll buy rolling avocado, crab meat and cucumber with seedweed. Yummy~~~
