Before I answer, I need you to elaborate on the cognitive content of this concept:

"A building so tall that it cannot be jumped over by a being who can jump over anything."

What conceivable actuality does this concept actually specify? Kind of along the lines of a "square circle," isn't it?

I think you might find the problem to be not with God, but with the vacuousness and incoherency of your question. God may be omnipotent, but he can't stop your nonsense from being nonsense.

With God all things are possible. -Matthew 19:26 AND Mark 10:27 I don't think that this is one of God's priorities however.

This is not a real question because you are asking something about a GOD which is Spirit and not flesh, so you can not think fleshly when you ask things about the Creator, so the annswer to your question is God is not tall not is he short but he is a Spirit and there is no size on him.

First He would have to create a planet bigger than the entire universe to support such a building. Earth isn't large enough for this tower. Surely He would want to challenge Himself, wouldn't He?

yes he can. since God can do anything, he could build a building and then limit his own abilities so that he wouldn't be able to jump over it.
