What is a good recipe for a Sausage and Cheese Chowder?

·1 pound mild pork sausage
·1 medium onion, chopped
·1 clove garlic, minced
·3 ribs celery, chopped
·3 tablespoons flour
·3 cups chicken broth
·1/2 teaspoon salt
·1/8 teaspoon pepper
·dash thyme
·2 teaspoons fresh chopped parsley or 1 scant teaspoon dried parsley flakes
·2 1/2 to 3 cups chopped potatoes
·1 carrot, fine dice
·1 can corn with peppers, drained, or 1 1/2 to 2 cups Southwestern corn blend
·1 cup heavy cream or half-and-half
·1 cup shredded Cheddar cheese
PREPARATION:
Cook sausage in a large saucepan with onion, garlic, and celery, breaking sausage into small pieces. Drain excess fat; stir in flour until well incorporated. Add chicken broth and seasonings. Add vegetables and bring to a boil.
Reduce heat, cover, and simmer for about 15 minutes or until vegetables are tender. Add cream and cheese and heat until cheese is melted and soup is hot. Taste and adjust seasonings, adding more salt and pepper if needed.

Mace Meat's Polish Super Bowl

Ingredients:
1 tablespoon butter
1 pound smoked sausage, chopped
2 cups chopped onions
2 cups diced carrots
1 cup thinly sliced celery
1/3 cup flour
1 12 ounce bottle lager beer
3 cups chicken stock
2 cups diced red potatoes
2 cups milk
3 cups grated sharp cheddar cheese
1 teaspoon dried thyme
2 teaspoons Worcestershire
2 teaspoons sweet Hungarian paprika
2 tablespoons tomato paste
Salt, pepper and Tobasco (Any of your favorite spices will do) to taste

Directions:

In a heavy 4-quart Pot, melt butter over medium heat and cook sausage 5 minutes, stirring occasionally. Add onions, carrots and celery and cook 5 minutes. Stir in flour, coating vegetables well. Stir in beer and stock and bring to a boil. Lower heat and simmer until soup thickens slightly, about 5 minutes. Add potatoes and cook 10-15 minutes or until tender.

Stir in milk, cheese, thyme, Worcestershire, paprika and tomato paste. Continue stirring until cheese is melted ans soup is smooth. Season with salt, pepper, and Tobasco, if desired. Garnish with scallions. Serves 6-8.

I have one! It's long and makes a bunch, but you'll polish it off in a couple days.

1 cup butter
1 carrot peeled and chopped (I use a handful of baby carrots)
2 tsp minced garlic (I use more)
1/2 cup chopped onion (I use reds)
2 cups flour
1 qt. chicken stock
1 qt. milk
2 bay leaves
1 tsp dry mustard
2 tsps Worcestershire
1 tsp salt
1 12 oz. beer (I use a very light beer)
6 oz. shredded Swiss (I just cube up the slices)
4 cups shredded cheddar
1 pound sliced sausages

Cook carrot garlic and onion in the butter until softened. Add flour and cook for 5 minutes stirring often. Andd remaining ingredients except for cheese and sausage. Simmer on low until it's thickened, whisking often. Whisk cheese into soup. Add cooked sausage and simmer.

It has some prep and watch time, but I can guarantee you that you won't be able to stop eating it. I used to make it for my restaurant. The basic recipe is from Hillshire Farms, with my own changes.
