I have to write a one page paper on careers in the health information management field in which medical terminology plays a critical role. It sounds easy, but I'm having trouble narrowing all the information down to one page. Can someone help me?

Well, I'm a consultant in implementing SAP technology for multi-national corporations. There are a number of large companies in the medical industries that use SAP and to understand their business (and, thus, implement a system to facilitate it and make it more efficient) you must understand their medical terminology.
Closer to what I think you mean, though, would be implementing / sustaining (supporting) the information systems at a hospital (or group of hospitals). These information systems, I hear, are often quite complex and relatively specific to the needs of each hospital as the information is (a) essential to saving lives and (b) confidential between client and patient.
Surely, in such a role at a hospital or other medical facility, one would be heavily demanded upon to know medical terminology.
