If you don't have buttermilk, you can substitute 1 cup of any type of milk, with 1 tablespoon of Lemon juice.

It really depends on the recipe you are making. Buttermilk reacts differently to other ingredients in a way that regular whole milk will not. If you are out of buttermilk you can make your own.

* 1 cup whole milk
* either 1 and 3/4 Tablespoons cream of tartar or 1 Tablespoon
white vinegar or 1 Tablespoon lemon juice
Add acidic ingredient (tartar, vinegar or lemon juice) to the milk and stir. Let stand at room temperature for 15 minutes. The milk should start to curdle. Stir well before using.

A combination of plain yogurt (3/4 cup) and whole milk (1/4) cup can also be used to replace a cup of buttermilk in most recipes.

Buttermilk can be substituted with any other milk with very little problem. If you use a tablespoon of lemon juice, vinegar or something similarly acidic (depending on the recipe), this will "turn" the milk slightly to give it the same characteristics as buttermilk, which is, after all, slightly sour milk. Just allow the regular milk, with the acidity added, to stand for a few minutes before adding to your recipe.

If you have no buttermilk, you can make your own substitute, but go for the real thing if you can. Yogurt can be substituted for buttermilk, volume for volume, meaning 1 cup of yogurt can be substituted for 1 cup of buttermilk. In the reverse, you can usually substitute buttermilk for yogurt or sour milk on a one to one basis.

You'll also find buttermilk powder in your grocery store. Basically dehydrated buttermilk, it has an admirable shelf life, almost indefinitely on the shelf unopened and up to a year and even longer after opening when stored in the refrigerator. Buttermilk powder is generally used for baking rather than drinking.

You can add lemon juice or vinegar to regular milk and it will work as well as buttermilk the ratio is 1 1/2 Tablespoons of etiher to one cup of milk= 1 cup buttermilk

It's not quite the same. A good sub is to toss a tbsp of lemon juice or vinegar in a cup of milk and let sit for a few minutes. Sounds gross, but it works just fine.

You can, but it will taste different. Buttermilk has a heavier cream content. Try mixing sourcream, and whole milk. that is the closest I can think of.

buttermilk is AWFUL. Regular milk is yummy. So they won't produce the same results, but you can try the first answer's suggestion. It still won't be the same though.
