For quick fixings dinner.
Tropical Smoothie
In blender, combine 1 cup plain low-fat yogurt, 3/4 cup mango chunks, 1/2 cup banana slices, 1 tbsp. lime juice, 2 tsp. sugar, and 4 ice cubes. Blend until smooth and thick. Garnish with a mint sprig and slices of mango and lime. Serves 2.
Deli-Style Potato Salad
In large bowl, combine 1/3 cup plain nonfat yogurt, 1/4 cup light mayonnaise, 1/4 cup chicken broth, 3 tbsp. red wine vinegar, 4 sliced scallions, 1/2 tsp. salt, and 1/2 tsp. pepper. In large pot of boiling water, cook 2lb. quartered small red potatoes until tender. Drain. Add to bowl and toss. Serves 4.
Beef & Fruit Kebabs
Toss 3/4 ld. well-trimmed sirloin, cut into 1-inch chunks, with 2 minced garlic cloves, 2 tbsp. lime juice, 1 tsp. oregano, and 1/2 tsp. each salt, pepper, and sugar. Soften 16 dried apricot halves in boiling water; drain. Thread beef and apricots on 8 skewers. Broil 6 inches from heat for 3 minutes per side for medium-rare. Serves 4.
And lastly.......
Melon in Syrup with Toasted Almonds
In small saucepan, bring 1/3 cup water, 3 tbsp. sugar, and 1 tsp. grated lime zest to a boil. Boil 3 minutes. Cool. Add 11/2 cups honeydew cubes and 11/2 cups cantaloupe cubes. Serve sprinkled with 1/2 cup toasted sliced almonds. Serves 4.

Try this
take a piece of fresh salmon and put some shrimp (4-5) and tomato slices, salt and pepper on it then wrap it in tin foil and put it in the oven at 350 for about 20 minutes. While this is cooking you can boil up some rice and heat some vegetables and you have a great meal

Spaghetti Pie III

Yields: 7 servings
"Really easy and filling recipe. Serve with a tossed salad and garlic bread. Better than lasagna."
INGREDIENTS:
1 pound spaghetti
1 pound lean ground beef
1/4 teaspoon salt
1/4 teaspoon ground black
pepper
garlic powder to taste
1/2 cup chopped green bell
pepper 1 (26 ounce) jar pasta sauce
3/4 cup sour cream
1/2 cup chopped green onions
1/2 (8 ounce) package cream
cheese
1 1/2 cups shredded Cheddar
cheese
DIRECTIONS:
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2. Preheat oven to 350 degrees F (175 degrees C).
3. In a skillet over medium heat, brown the ground beef. Drain and crumble. Put crumbled beef in skillet. Stir in salt, pepper, garlic powder, bell pepper and pasta sauce. Bring to a boil; reduce heat and simmer for 20 minutes.
4. In a small bowl combine sour cream, green onions and cream cheese and set aside. Coat a 9x13 inch baking dish with cooking spray and add the cooked spaghetti. Spread the cream cheese mixture over it, add the meat mixture and sprinkle with Cheddar Cheese.
5. Cover and bake for 25 minutes. Uncover and bake for 5 more minutes until the cheese is bubbly.

Turkey Bow Tie Skillet
INGREDIENTS
1/2 pound ground turkey breast
1 1/2 teaspoons vegetable oil
3/4 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green pepper
1 garlic clove, minced
1 (14.5 ounce) can chicken broth
2 cups uncooked bow tie pasta
1 (14.5 ounce) can stewed tomatoes
1 tablespoon white vinegar
3/4 teaspoon sugar
1/2 teaspoon chili powder
1/2 teaspoon garlic salt
2 tablespoons grated Parmesan cheese
1 tablespoon minced fresh parsley
DIRECTIONS
In a large skillet or Dutch oven, cook turkey in oil over medium heat until no longer pink. Add the celery, onion, green pepper and garlic; cook until vegetables are tender. Remove the turkey and vegetables with a slotted spoon and keep warm.
Add chicken broth to the pan; bring to a boil. Add bow tie pasta; cook for 10 minutes or until tender. Reduce heat; stir in the stewed tomatoes, vinegar, sugar, chili powder, garlic salt and turkey mixture. Simmer for 10 minutes or until heated through. Sprinkle with Parmesan cheese and fresh parsley.

We love going to Charleston, SC for the food and sites. One of my favorite dishes is shrimp and grits. Go to foodtv.com and look under Rachael Ray thirty min meals. This particular recipe has beer, onions, bellpepper, and other yummy things. Very different but tasty and a little spicy.

My guy and I have fun frying catfish, boiling crawfish, cooking steaks/chops on the grille, or just making hamburgers. Pick something simple you both enjoy but don't have all that often.

Pizza is super fun. Just buy the premade crusts and sauce and any toppings you like. My husband and I really enjoy doing this together! I hope you have fun.

Rosemary garlic chicken.
use skinned boneless chicken, put in ziplock with rosemary, fresh minced/pressed garlic .....pound a bit to reduce thickness
let sit to flavor meat.
brown in skillet over med heat.....when done, remove chicken, deglaze pan with white wine....any kind will do.....(even white zin)...add a bit of real butter....reduce to sauce....
serve with basmatic rice....and salad
