I am looking for a good coffee cake recipe that is easy to make, but I want to use my jelly roll pan for it so that it will go a bit further.
I think I can use a regular recipe but I don't know how much batter is needed to fill the pan and the baking time.

Batter:
2 cups flour
1 cup sugar
1 teaspoon salt
3 teaspoons baking powder
2 eggs
2 tablespoons melted butter
1 cup milk
1 teaspoon vanilla

Topping:
6 tablespoons melted butter
1 cup flour
1 cup sugar
1 tablespoon cinnamon
Mix ingredients for Batter and put in a greased jelly roll pan.

Mix ingredients for Topping and crumble over batter. Bake 25 minutes at 350° Fahrenheit.

Quick Coffee Cake
Here is a quick coffee cake that is always a hit.
Spray a jelly roll pan.
Preheat the oven at 350 degrees.



1 cup sour cream
3 large eggs
1/4 cup water
Mix all these together.
1 white or yellow cake mix with pudding.
Stir this into other ingredients. Don't beat, batter will be lumpy
Spread into the jelly roll pan.

1 can cherry pie filling
Drop the pie filling all over the batter with a small spoon.
Bake 350 degrees 25 minutes. It will be browned and spring back to the touch.
1 1/2 cup powder sugar
2 tablespoons of milk or water
1 teaspoon almond extract
Mix and drizzle over the warm cake. Serve warm

I am also looking for something similar. Way back in the 60s my mom had a recipe for a coffee cake, it used real coffee in the mix, you could add raisins or walnuts if you wanted and it was put in a jelly roll pan. Once out of the oven my mom would make a powdered sugar and coffee glaze. It was so good. I used to take it to my 4H meetings. After mom passed away I could never find that recipe booklet. Any help would be greatly appreciated.
