Thank the person for the gift, just do not mention the amount of the gift. "Thank you Aunt Helen, for the monetary gift and the nice card, I will put the money to good use! My savings account could use a little help, you know I can hear Harvard University calling to me in my dreams! Better start saving more, or I will be calling the local junoir college, instead."
My Aunt told me she always got a kick out of my telling her what I was going to do with the money she sent me every year for my birthday. It was just a couple bucks, but back then, it went a lot farther. She said it was usually music or books that I said I would get, she even asked me if I really spent the money on what I said I would. Yes! I did. I have the record collection to prove it.[oops, now you know what generation I belong to!] 45 rpm records cost less than $.50 each, I could buy 4 with the money. Dear Auntie sent that money every year for 20 odd years. Now I send her a check every year. The first year, I added up the amount of all the money gifts she sent over the years, and sent her a check for that amount, and a nice note and card about how that money gave happiness to a lonley only child every year. She took the check and card to her Ladies Club, and showed everyone.
So if you want the bucks to keep coming, be sincere. Humor is good, use it. One year I sent the thank you with a guess what I am going to buy? That's right, records!
And if your goal is not so noble, you are saving for the latest techno whatever, say that. "Aunty, I really need to buy some more memory for my computor, it will help me with my school work, and I need a place for all my music that I download."
And do not forget to inquire about the giver's health, or say that you hope their Christmas was a good as yours.

Thank you so much for the generous Christmas gift! I really appreciated that you thought of us. Our Christmas went well, it was just the two of us so it was quiet, but quite nice. We're planning a trip up north in a couple of months, hopefully we'll be able to stop by with mom for dinner. Otherwise, we do have a spare room here for you to come visit us! (If they gave you money for something they know you've been wanting, you can say "You know I've wanted **** and I will be able to get it soon because of your generous gift." You can also say: "I will be sure to put it in the bank as soon as I can.")
