He's getting tired of meat sandwiches.

I am always travelling, and got tired of eating sandwiches, and eating airport food (expensive, and not good for you). On the airplane, we don't have microwaves either; nor do many hotels have them (thank goodness for coffee makers), so this is what I came up with.

Cans of tuna, salmon, or chicken (single serve with poptop lid)
Single serve 100-calorie packets of crackers, chips, and cookies
Single serve packets of dried fruit or trail mix
Individual serving packets of nuts
Instant Cup of Soup (any flavor)
Cup of Ramen (whatever his favorite is, in the styrofoam cup)
Instant Mashed Potatoes (any flavor)
Oatmeal and Grits Packets (any flavor)
Breakfast bars or granola bars (any flavor)
Melba toasts or thin crispbreads, packed individually in baggies
Tortillas (pack these rolled, and wrapped in clingfilm)
Mini cheese rounds (don't need to be refrigerated)
Shelf-stable single serve packets of milk (in canned milk aisle)
Individual fruit cups (mandarin oranges, mixed fruit, etc)
Single serve veggie packets (carrots, broccoli, etc)
Single serve peanut butter (if he's not allergic)
Small packets of jelly (any flavor)
Small cans of sliced black olives (pack an army can opener too)

Look in your local grocery store for things like this, there are alot more of them, especially in the ethnic food section and the soup section.

For his first day out:
A sushi box (vegetable ones travel better) packed with frozen edamame pods (the pods will thaw, and are edible like that)
Individually wrapped cheese sticks
Cups of yogurt
Individual cups of Jell-o Gelatin (pick any flavor)
Individual cups of cottage cheese
Hard cooked eggs, shelled, in baggie (rinse, leave bit of water on)
A salad with croutons and dressing packed separately
These can be packed in a cooler with "ice pillows" or those ice substitutes available in the camping section.

Gas stations and fast food restaurants are actually really good about giving you hot water for free, or really cheaply ($.05). As long as he has plastic silverware, some napkins, and one or two of those small Rubbermaid-type collapsible dishes, he's good to go.

Other things I usually carry are:
Single serve sweetener packets
Single serve drink mix packets (various flavors)
Single serve dried lemon and lime juice packets
Wet naps (single serve)
Regular paper napkins
A bottle of water
Single serve chocolate disks (high in calcium)
Tea bags and / or instant coffee packets
Liquid non-dairy creamers
Single serve honey sticks
Singles of ketchup, mustard, pickle relish, and mayonnaise
Single cups of fat-free ranch dressing

You can always do specialty crackers with smaller meat and cheese squares. You can do soft tacos with cold marinated chicken and all the fixings are cold already. For a meatless day he can have veggies with dip and a prepackaged jello cup. Salads are always good too. We love chicken taco salad and you can do that with cold marinated chicken, all the fixings, taco chips and we like garlic-cheese Italian dressing, I know not completely Spanish, but it tastes awesome! Many choices...we try them all too. Prayers =)

-peanut butter and jelly sandwiches
-green salad with whatever veggies you want with dressing in small container and striped of chicken on side
-wraps (use tortillas and add veggies and meat)
-pita bread stuffed with veggies and meat
-juice and water
-something sweet (not everyday bc not healthy) such as an oatmeal cookie, or small muffin, whatever he likes
-also put in a piece of fruit, an apple, orange, banana.. whatever he likes
-make him a chicken salad, tuna salad with tostada chips or ritz crackers
-soups in thermo when it is cold not in the summer!!!

Pasta with Tuna and Cheese.

Thick winter vegetable soup, hot in a vacuum flask, plus crusty bread and butter.

A salad without lettuce: tomato, onion, cucumber, red/green bell-pepper, cubes of Feta cheese and pitted black olives, in an oil, vineger and herb dressing. Great at home too, with steak and blue cheese sauce or with lamb chops and fries.

Slices of french bread, slices of tomato with oil, vinegar and herb dressing or his favorite dressing, slices of buffalo mozarella.

Have you heard of a hot and cold lunch cooler bags. My mother in-law has one. She can pack basically anything in it and its perfect. Stays so warm for hours. She found it on the Internet because her husbands drives 2 hrs to and from work.

If you have one of those you can basically cook or prepare anything for him.

If he likes smoked salmon try this....spread any flavor tortilla with cream cheese, crumble on some smoked salmon and cucumber...wrap and serve with a piece of fruit and some chips/crackers.

Ham and cheese sandwiches (or turkey), cookies, chips and dip, wraps (think Subway), salad, the list goes on.

well..i have the same problem trying to find stuff for my husband to eat. i try to mix it up and make wraps instead of normal sandwiches. there are good recipes on weightwatchers.com. or the south beach diet lunchable things are pretty good.

try making him a wrap... get some flour tortillas, spread a thin layer of cream cheese over it (very thin), put on some sundried tomato turkey breast, leaf lettuce, tomato, marble cheese, then wrap it up and cut it in half... voila... a meal that is great and quite simple to make...
