CHOCOLATE BROWNIES

Grease and line a 7 in. square cake tin. Preheat oven to 180 C.

Melt 4oz plain good quality chocolate in a bowl over gently simmering water. Allow to cool slightly.

In a large bowl beat together 6oz caster sugar, 1 rounded tablespoon golden syrup, 2oz soft butter until smooth. Add 2 eggs one at a time beating in well. Whisk in 1 teaspoon vanilla extract and 2 fl. oz warm milk and beat for 30 seconds.

At this stage the mix may look curdled - that's normal! Whisk min the melted chocolate beating for about 1 minute or until the mixture is smooth and thickened. Fold into the chocolate mix sieved 2oz plain flour , half teaspoon baking powder and a pinch of salt. Spoon into tin and bake for 20/25 mins . When tested with a skewer there should be some moist crumbs sticking to it - do not overbake.

Cool in tin for 10 mins then on wire rack. Dredge with icing sugar.

Limoncello WHITE CHOCOLATE MOUSE RECIPE:
Ingredients:
150g white chocolate, broken
2 tsp gelatine in 1/4 cup hot water
1 whole egg, plus 1 egg yolk
3 tbsp Bella Verde Limoncello
(remember to have this out of the freezer
in preparation for adding to the recipe)
250ml cream

Directions:
Melt the chocolate in a bowl over a pan of simmering water.
Prepare the gelatine.
Put the egg and egg yolk in a bowl over a pan of simmering water and whisk until the mix is thick and creamy and holds a tail. Too long and the eggs will scramble - like they did the first time I tried.
Add the melted chocolate, the softened gelatine and the Limoncello to the beaten egg and mix well.
Lightly whisk the cream and fold into the mixture. Pour into 6 espresso cups and chill until set - about an hour.
Serve with a shot of Limoncello

GOOD LUCK!
AND ENJOY!!!!!!!!

Ingredients
150 grams of digestive biscuits
50 grams of rolled oats
50 grams of seedless raisins
25 grams of apricots
25 grams of blueberries
25 grams of cranberries
25 grams of soured cherries
75 grams of butter
2 tablespoons of golden syrup
50 grams of dark chocolate with a high cocoa content
Method:
In a large bowl crush the biscuits with a rolling pin. Make sure you don't crush them too finely, you want them to be a bit crunchy!
Add the oats and fruit to the biscuits and mix together well. Break up the chocolate into small chunks (this will help it melt more easily). Melt the chocolate, butter and golden syrup together over a gentle heat.
When it has completely melted, add it to the dry biscuit mixture and stir it together well. Press the mixture into a shallow square or rectangular tin and leave it in the fridge to harden for about 20 to 30 minutes.
Take it out of the fridge and cut it into squares and enjoy!

Go to the waitrose website. They have a HUGE amount of recipes with chocolate in. Like chocolate fridge cake, and chocolate tart, and chocolate compote and chocolate & raspberry tartlets, and white chocolate mud cake.

Ooooh, and if you know how to make chocolate mouse, use white chocolate and it's amaaaaazing. mmmm, I want chocolate now......

Oh and.... get a banana still in it's skin, slice it lengthways about 3/4 of the way through, and put some dairy milk in the groove you've made. Pop it on the bbq for 5 mins and scoop it out of the skin. yum. very simple, very quick, and you can just put it under the grill if it's not bbq weather....

Chocoholics unite! Have you ever heard of Crock Pot Candy? You melt down chocolate in a crock pot & add in nuts. Then you mix it all up & drop by spoonfuls onto wax paper. Let it cool in the fridge. Easy & delish!
